Murgh Haleem

Haleem has originated or is inspired by an Arabic dish, “Harees” which is made with meat, ghee, wheat, rice and whole pulses. The Persian name for the meat – wheat dish is “Hareesah”, which unlike Haleem is bland and uses lesser amount of pulses as well. An author once also suggessted that the version of Haleem made in India should have its name revised as “Daleem” since it uses a variety of Daals / Pulses.

Like so many other dishes that proudly make a mark in Indian/Pakistani/ Bangladeshi cuisines, Haleem was also introduced to Hyderabad recipes during the Mughal Era. The research shows that it came to Hyderabad during the Mughal period via Iran and Afghanistan. Adding the local spices and ingredients to it was definitely an upgrade from the original Arabian dish.

It says that it was during the rule of the sixth Nizam, Mahbub Ali Khan when Haleem was being revised to suit the Indian taste buds. The addition of spices made a huge difference to the dish and it did take effort and time to make it what it is today. By the the time, the seventh Nizam Mir Osman Ali Khan made his way to the throne, Haleem had become an integral part of the Hyderabadi cuisine.

With time, it became popular amongst all Muslim rulers and royal chefs made few changes here and there to make it more appetizing. The basic Haleem recipe comprises of a variety of lentils, meat/ chicken , and spices which are pounded together and cooked on a low flame for about 12 hours, which in todays time and age sounds time consuming and insane. Even today, if you wish to taste autjentic Haleem, you will have to take a trip to the Muslim areas of popular cities and visit those restaurants that are popular for their food and do not care much about the ambience. Honestly, I call them food lovers Paradise. As soon as you are close to those places, you can follow the fragrance of delicious food with your eyes shut. If you are like me, and can ignore the tables put close together and with people staring at you while you eat, you should visit these places at least once when you are in these popular cities. Delhi’s Jama Masjid, Mumbai’s Mohammed Ali Road, Hyderabad’s Char Minar and Bangalore’s Frazer town is where you will always find authentic Muslim cuisines which are pocket friendly and wonderfully delicious. These days you will also find places where they offer great seating arrangements for families as well.

However, the local spices give the Hyderabadi version a peculiar taste and flavor. I once saw a TV show based on Hyderabadi cuisine and watching Haleem being cooked was a delight. Haleem is prepared using Daals, mutton/Chicken, Broken wheat, Rice and a blend of spices. Everything is cooked together and then mashed together to bring in the perfect taste. Haleem has to be prepared in Ghee. It definitely is high in calories but its nutritious as well, and that’s what makes it the perfect dish to open your fast with. Even today, traditional Haleem is prepared in Brick – mud ovens or Bhattis on firewood and takes anywhere between 8-12 hours to be prepared. Basic Haleem recipe only used Mutton, but with time, chefs added more variety and Chicken Haleem or Murgh haleem came out as a lighter version of the traditional Haleem. I love both, but Chicken Haleem seems to be liked more in my house and therefore is cooked more often. I am sure you will love the recipe as much as we do. Enjoy!!!

Shikari Chicken Rice

This is an invention by only hearing about the dish…Yeah I know I can go nuts when it comes down to trying to make a new dish. This happens to be one that I really planned out well and craved to make it.

Like I always say, every dish has a story. This one has one too. While speaking to a close friend about different Biryanis that we get at famous and not so famous eateries in India, I was told that a popular restaurant served something that was close to Biryani, but not Biryani. That really got my interest. Giving me further details, that its mildly flavored bed of Rice served under these awesomely juicy grilled chicken. I mean who wouldn’t want to act on this description and try and make it. It’s actually not just the details of the dish, but the way it was described and the fact that it topped the list of Chicken and Rice. I had not even seen the dish, yet I was head over heels in love with the dish and felt challenged to make it.

When you are aware of a dish, you tend to study it by searching about different chefs who have made it or by trying the dish out at different restaurants or even making the dish a couple of times to achieve the desired flavor or result. But when its a dish, you have never heard of until now, tried, seen or tasted, and you crave to cook it, you are definitely a crazy chef…LOLzzz. I think I fit the bill.

So, I am not aware of the Chicken served is with bones or without, but going according to my Biryani basics, I picked Chicken with Bones and marinated the chicken with spices and Yogurt for around 2-3 hours. Though my chicken came out delicious, I still recommend that a chicken is more flavorful if marinated overnight or for at least 6-8 hours, though in today’s time and age, things happen unplanned and we have a little time before we decide what we need to cook. For all those times, marinate, cover, and place the chicken in the refrigerator. Refrigeration helps blend the flavors faster and better. Once I was ready to cook them, I took them out of the refrigerator and preheat the oven to 400F or 180C. I placed them on the grill with a tray underneath to catch the dripping. The cooking time was around 25-30 minutes, with an extra 5 minutes of high heat grill, since I wanted them to look well done. If you want, you can cook them in the oven and do the latter process in a pan, or on naked fire. Any which way will give you great outcomes.

I made a gravy as well to spike up the layers of Rice. The gravy was made very similar to Biryani Yakhni shorba. For initial whole spices, I added fennel seeds along with cinnamon, cloves, green cardamom, and cumin seeds. I further fried the onions, taking half of it out for garnishing and using them while layering the Rice. That was followed by Ginger garlic paste and spice powders. Further adding tomatoes and Yogurt, combined with green chilies, mint leaves, and coriander leaves. I also added the marination left behind after the chicken is taken out, so it gets a little flavor from the chicken as well since we aren’t cooking the chicken in the gravy.

This is a lovely recipe for a weekend Brunch or to display your cooking skills to those uninvited guests, when you don’t want to spend too much time in the kitchen. It’s a pretty quick fix to traditional Biryani and modern-day Chicken over Rice. One of my self invented and the best recipes ever…Enjoy!!!

Chicken Hari Bhari Udaan

Doesn’t the name sound super funny? Or weird? Well, I will tell you the story behind the name. To start with, this recipe is completely made up by me. Now you might think, that isn’t a big deal for someone who presents herself as a chef. Yeah, probably not. But the things used to make this dish were the Chicken wings which otherwise are only used for recipes made with hot sauce or masala. So when I thought of coming up with a name. Chicken wings added the ‘udaan’ which means flight, Chicken of course is Chicken, and since I used Green masala, it’s “Hari Bhari”…I am sure you will love the recipe as much as the name.

This dish is super spicy. While making it I could feel the rush to taste it and when I did, it was one of the most amazing flavors I have ever created. Just make sure that if aren’t the bravest of heart then you need to keep a glass of water next to you.

This dish is made from the heart, there was no basic recipe, nothing that I have tasted before, nothing similar seen or heard of either…. just something I wanted to cook at that moment. If you enjoy spiced-up food and enjoy something that makes your mouth sizzle for a few hours after you have consumed it, this is a must-try.

I had Chicken wings and boneless chicken and I felt like combining both with loads of spice. Do you ever have a spice craving? I do, Big time, and even though I know it would hit me hard later, but I want my taste buds to party and feel satisfied as well… As much as I love different spices, spice mix with coriander leaves, mint leaves, and green chilies have always been my favorite. In this dish, I also added Black pepper powder with some whole spices and most importantly, the green chili sauce and Anardana powder.

Fennel seeds to me are a little underestimated and I believe they add a lot of fragrance to your spicy food, just like cardamom powder to your sweet dishes, and even though adding it to your dish in the initial minutes makes your house smell like a fancy Indian Restaurant, not a lot of people use it.

I used Chicken wings and little boneless chicken, but you are free to use any chicken with or without bones. Just that if using Chicken with bones, it adds more flavor since the sauces extract juices off the bones. Any which way you make it, this dish is will surely make your mouth water. You don’t have to stick to Chicken, you can also try the sauce with Fish, preferably something that is not very strong in taste, something like Haddock or Cod Fish or Whitening fish would be a better option. For the vegetarian option, you can always use Soya chaanp or Paneer, or Tofu. The sauce mix is great and is a fabulous mix for any protein preference you like.

Bangalore Dalcha

Muslim families all over India and Pakistan serve Biryani. It is basically our go to dish when it comes to big occasions. Now we do have people who aren’t great cooks or who cannot make Biryani, but trust me we rank No. 1 when it comes to judging people over food and more if the Biryani is not cooked or if its not cooked properly. Yupp, we judge and please don’t go over the beautiful smile appreciating the Pulao because in our mind, we know it could have been better….LOLzzz.

I apologize for getting a little funny before but its honestly the truth. Now, getting to the biryani part. We always serve Biryani with some accompaniment. In North India, its usually with different kinds of Raita, with a variety from plain boondi, onion, cucumber or mint. Southern part of India on the other hand serves Mirch ka salan, khatte baingan, Raita and Dalcha. Each dish is equally delicious and makes your Biryani taste even nicer.

This is my second Dalcha recipe that I am sharing. The one before was the recipe from my in laws and this one is inspired by the catering service from where we order food on family functions in Bangalore. This was a time when we ordered Dalcha instead of khatte baingan and Raita. This Dalcha was very different from what we regularly make. It was called “Shaadi ka Dalcha”. Funny but true

The daal wasn’t just Chana Daal but, a combination of Toovar daal and Chana daal. The daals should be soaked for an hour or two and boiled till soft. The bottle gourd should be boiled as well. When you start cooking the Dalcha, along with the regular spices, we also add fennel seeds. The fennel seeds adds a lot of fragrance to the dalcha. Adding chopped onions, tomatoes and spices make it perfect. This Dalcha does not have pureed coconut, but garnishing with dry coconut powder does add a lot of flavor.

Though Biryani in Muslim Families is a non vegetarian dish, but its always accompanied with vegetarian dishes like these ones and you might find it hard to believe but, dishes like Dalcha taste great with plain rice as well. So, if you happen to be a vegetarian, I wouldn’t suggest you to make Dalcha with Vegetable Biryani, but it would go great with Paneer Biryani or even plain Rice.

Chicken Tikka Masala Curry

One dish that Indians hold steady fast too, specially when we are far from home is Chicken Tikka Masala. Be it Paneer Tikka masala or Chicken Tikka Masala, it never fails to satisfy our taste buds. And, I think that’s why they are a part of every party buffet.

This recipe is very close to the restaurant style Chciken Tikka masala that you’d find at restaurants and you can always substitute the chicken with paneer and follow the rest of the recipe as is to get the perfect restaurant dish.

This recipe is one of the Best Chicken Tikka Masala Recipe that you can cook with ease. The flavor is smoky and making this dish at home also gives you the benefit of eating clean and fresh. At present my reasons to try this dish is because its the quarantine period and as much as I enjoy cooking, I leave some dishes to the restaurant to enjoy some favorites outside the house. But since we hit the Covid-19 Quarantine period, I had to start cooking at home and with the high spiked taste buds of my kids, I got down to making an at home Chicken Tikka Masala curry.

Ingredients to make Chicken Tikka Masala Curry Recipe, we would require Yogurt, I prefer the thick greek yogurt but you can always use the regular yogurt and hang it for 30 minutes to an hour. The thick yogurt helps adding a lot of creaminess to the curry. Boneless Chicken thighs work best for the recipe. A lot of times I have been asked why I prefer Boneless thighs over Boneless chicken breast and my answer is simple, that chicken breast tends to get dry quickly and specially with gravy dishes, Chicken breast fails to absorb the juices from the gravy.

The chicken needs to be marinated in ginger garlic paste, lemon juice, salt, vegetable oil and tikka masala spice mix to marinate the chicken. You’d require onions, whole spices, tomatoes [chopped and pure’ed] , chilies, ginger garlic paste and the regular spices as red chili powder, turmeric powder, cumin powder and tikka masala powder, along with honey, kasuri methi and cream.

Tikka Masala Powder

To make the most authentic Chicken Tikka Masala I always tried a store bought ready made masala but then I decided that I should try and make it at home, since I started feeling that I smelt something weird in the mix. No, I don’t judge people who use it, it’s completely cool but then once I decided that making the masala at home, I felt it was so easy so, I decided to share it with everyone.

Gathering spices from your pantry would be easy to make this super delicious masala that can be kept in a cool dry place for up to 2 months. So within minutes, I gathered up all the spices for making this masala that could be used whenever you feel like making any Tikka with or without gravy. Tikka Masala Spice Mix is a fine motley of aromatic and strong spices that end up granting the quintessential flavor to any delicacy for which it is used!

The masala is prepared using the fine mix of Coriander seeds, Cumin seeds, Cloves, Cinnamon stick, Green cardamom, dry Kashmiri red chilli & whole black pepper. After dry roasting the whole spices, add Turmeric Powder, Red chili Powder and Tandoori Powder. Mixing everything together Tikka Masala Powder creates a royal treat of flavors for your palate without a doubt.

Chettinad Chicken Curry

A beautiful Chicken recipe that sure opens up all your taste buds in an amazingly flavorful way. This curry is spicy and only for the brave of hearts. Now the spice level can always be turned down by adding less chilies than recommended. You can always make modifications to suit your own palate, but the fact is that this is not the curry where you should really be doing this. It has to be made this way for experiencing the real taste of Chettinad.

This recipe is from the southern state of India, Tamilnadu. Chettinad chicken curry is quite fiery. I have tasted this curry as different restaurants, each different from the other. The curry always managed to win our heart. But I had never thought of making it at home until recently that we tried it as a restaurant in Bangalore, the night before we were traveling back home.

First bite of that curry and I just knew that this was the perfect Chettinad curry ever. the spice level just sent us rocking. I just knew that all the ones before this were so modified and I would highly recommend, please do not do that. This curry is amazing and is one of our family favorite too.

Halwa Puff Pastry

Halwa Poori is a traditional Bangalore dish, popularly made by Muslim families specially during weddings. During a wedding, a no. of food items go from the Bride’s side to the Groom’s side, which also includes Halwa Poori. There are also numerous occasions when they are made at home, but they kind of always need a special reason. I have no idea where the tradition came from, but it does have a little Mughlai influence and that’s why the traditions are carried on by Muslim families.

The reason probably is also because it a tedious job making them, requires time and effort and usually made in a large batch too. When made, its always distributed among relatives, friends and neighbors. When I first saw Halwa Poori, it reminded me of Diwali Gujiya and honestly I have never been a fan of Gujiya. I always found them too coconuty and I also felt that it was always too dry and the dry coconut would start falling out if not careful. I also felt that if there was something that was nicer, softer and sweeter and Halwa Poori seemed to be a perfect answer to it.

Halwa is made of Chana daal, coconut, Khoya, Milk and sugar cooked together in ghee/ Oil. The poori is made from All purpose flour. The halwa is filled in the poori and then sealed and fried. The traditional recipe is great and awesome if you are serving a large no. of people in a day or two. After that they kind of get a little mushy unless you keep them in a perfect airtight container.

Initially when I started making Halwa Poori, t was hard to make them for just the two of us, Mr. Parveez and me. Making 10 would be more than enough and would last us more than a week and usually by day 2 we would be dead bored and didn’t feel like eating more. So, this is when I felt that the Halwa poori needs a twist and I changed it to halwa Puff Pastry. The good thing about that is that I can always make the dough for puff pastry and keep it in my freezer. And, for the Halwa, I can make and refrigerate it for up to 15-20 days. This way we make the puff pastry whenever we want, eat them warm and fresh and we can also use the Halwa as just halwa minus the poori or puff pastry.

Chane ki Daal ka Meetha

This is the first sweet dish that I made from my Sasuraal side. Coming from Rajasthan, I was in love with Moong ki daal ka Halwa and when I heard about Chane ki daal ka Halwa, I was super excited and loved the taste when I tried it. Once we moved to USA, I started trying to make it on home.

The first try was something I did by myself, without asking my Mother in law for the recipe, but for some reason it wasn’t as good as what we had eaten and neither me, nor Mr. Parveez was able to figure out what went wrong or what was missing. And, that’s when my Mother in law came to the rescue. I spoke to her over the phone, giving her details about how I tried making the “meetha” and that I didn’t understand what went wrong. She patiently explained the over all recipe and the “magic ingredient” that I missed was Cinnamon and cloves.

Little did I think that Cinnamon and clove make so much difference to this Halwa. I could never imagine adding these 2 ingredients will actually add so much flavor and fragrance to this sweet.

This sweet dish is one of the easiest sweets I have ever made and it has always impressed everyone. The best part that I like about this sweet dish that, it’s mistake proof. Having said that, I mean that there is no mistake that you make while cooking this, that cannot be fixed and that too easily. So, if you are new at making Indian sweet dishes, this is your go to dish. It’s great for beginners and also great if you have to make something in a jiffy.

Ambur Biryani

Aambur, is a town in the district of Vellore in Northern Tamil Nadu. Its a signature Biryani is made originally from zeera sambha rice.

As the story goes, Ambur/Vaniyambadi biryani is a type of biryani cooked in neighboring towns of Ambur & Vaniyambadi in the Vellore district in the north-eastern part of Tamil Nadu, which has a high Muslim population. It was introduced by the Nawabs of Arcot who once ruled the place. There are also some stories that believe that Mughal soldiers once while they were down in the southern region of India, craved Biryani and ended up with this recipe as they had to make up their favorite dish with locally available spices and rice, hence the use of Zeera sambha.

The Ambur biryani is accompanied with ‘dalcha’, khatte baingan curry or raitha. It has a distinctive aroma and is considered light on the stomach. The usage of spice is moderate and curd is used as a gravy base. It also has a higher ratio of meat to rice.

Now continuing with my story, as most of you who follow me know that I love tryong new recipes of Biryani. So this one day, while watching an Indian TV channel, my hubby, Mr. Parveez  came across a restaurant serving Ambur Biryani and it happened to be a Friday morning, [every Friday without a miss, I cook biryani for dinner] and he facetimes me from his office while I am out for grocery shopping, “Baccha , can you look up for Ambur Biryani and make that today?”

While I am always happy to try something new, I also get upset if I have to rearrange my shopping list. To my surprise, when I found the recipe, it didn’t use any fancy ingredients and I basically had them all at home. Making the Biryani was so easy, that I looked through the recipe twice after being done to make sure I wasn’t missing on anything. Its definitely pleases the crowd and easy to make too. So, if you are a Biryani fan like me, this is a must try.
