Korean Barbecue Chicken

We love chicken, Biryani, Kebabs, curries, soup. Its easy to cook and loved by all. I am always on a lookout for new recipes, specially recipes that can be eaten by kids from all cultural backgrounds. Indian foods offer large variety of kebabs, but sometimes kids just want a different flavor altogether, and I am always trying to experiment with different flavors.

We once went to this wonderful Korean BBQ Restaurant. We could only stick to the seafood since the chicken or meat wasn’t halal. The live BBQ was awesomely set up on our table and though they do serve with different salads and Rice bowls with sauces, but the there was nothing that we enjoyed more than the seafood. The amazing part was that the seafood they got was not marinated, and they carried marination sauce bowls that they would brush on the seafood and this was the first time I ever came across a marination that can be put directly while the food is being cooked. That’s when I felt I had to try this at home with Chicken or meat, and that trying turn finally came after almost a year.

I marinated the chicken slightly with salt and vinegar. The Indian me wanted to add a little ting to it before I started cooking it. It was lovely making the sauce, I tried to make it as close as I could to what I had tasted. the kids loved it and it can be made with ease and in when you have little time in hand. There are some modifications to make it look pretty, you may or may not. Enjoy!!!

Pull Apart Long Buns

My boys prefer home lunches and also love varieties for their lunch. When I use the word variety, I mean that they would not want a dish to be repeated in 2-3 weeks and believe it or not, its a lot of pressure to make something that tastes great and that they would love it as well.

These chicken buns are easy to make and can be easily made by beginners as well. The chicken does not have to marinated for too long and even the process of marination is with pretty simple ingredients. This is great dish if you have boneless chicken available and haven’t thought of anything in mind, and need to get things ready in a rush.

My boys prefer this in the hot dog bun Sandwich, but this chicken would taste great even with a tortilla and Roti wrap too. I have tried them with ciabatta, french long bread and croissants as well.

I usually make this and serve it with a different spicy sauce . The recipe for the spicy sauce is in the sauce section. A blend of mayo, ketchup, hot sauce and mustard sauce goes perfectly with this spicy shredded chicken to give that kick to this sandwich.

Oven Fried Chicken Roll

A little twist to our all time favorite fried chicken roll. My kids love the fried chicken roll. We tried it in some restaurant in India a few years back from a popular joint. The roll was amazing crunchy and delicious. Since, we returned, these chicken rolls found a place to our play date parties, since they are a big hit in kids.

Though I would always fry my chicken but then when a dish is made more often, it sometimes makes you switch to a healthier option and that is exactly what I did with my fried chicken roll. Instead of frying it in oil, I substituted my fryer with my oven to make the chicken a little more healthier. The bread/Roti that i made for the roll is also cooked on a skillet without using oil.

Its funny that a person like me who isn’t very conscious about what she eats and I also truly believe that flavors shouldn’t be played around with and I made sure of that with this one too. This dish came to perfection after a few trials and errors and this is the final outcome, as good as the regular one.

Now, the first try for making the chicken without frying was cooking it in the air fryer. I am not sure if people achieve a lot of success while using air fryers, because I don’t seem to like them much. I have an air fryer from one of the best companies and I did follow all the instructions as well, but the chicken came out very chewy and the outer part wasn’t as crunchy either. I tried again and this time sprayed a little oil. The result was great exterior and very chewy inside.

Then I decided I should give my oven a try too and though everyone has their preference, but trust me on this one that the oven gives you much better results than an air fryer. There is definitely a little more work where you will have to turn the pieces around mid way cooking to ensure the chicken is cooked evenly from all sides, but, it’s totally worth it.

The sauce that I used to assemble the roll is pretty simple to make. The recipe is available in sauces. If in case its not, please feel free to remind me. Being a homemaker and a mother to two boys, I do forget updating things…LOLzzz

Carrot Masala Toast

This masala toast is a famous snack from Iyengar bakery, which I had never tried. Being from North India, there are these few things that you miss out on. Like the fresh made veggie toast. Ohhh!!! Don’t get me wrong, I love the north Indian malai bread and potato sandwich or paneer sandwich, but I still fell completely in love with this iyengar bakery masala toast.

This was first made by my husband, Mr. Parveez when he wanted to flaunt his cooking skills, show casing how breakfast can be made quick, delicious, light and above all, healthy.

This toast can have variety of veggies put but, the authentic iyengar bakery toast only has carrots, tomatoes, onions with a few spices and chilies. It’s a perfect breakfast for on the run, or a perfect snack for warming up those after school/evening cold winters with a warm drink.

Gobhi Manchurian

We are a hard core Non vegetarian family. But, as much as people see our love for non vegetarian food, we equally love vegetarian as well, which kind of goes unnoticed. I don’t blame anyone, since with the huge variety of Biryanis and kebabs that we make, people believe that we can never go complete vegetarian.

Anyways, so I tried this recipe not just to test my veggie cooking skills but also because most of my close friends are vegetarians and that I think is the first reason why I tried a chicken dish with cauliflower.

This dish is as delicious as the chicken one. The good thing is that being vegetarian, it keeps your belly feeling lighter and less bloated. It can be served with plain boiled rice on the side or just by itself. Makes a great side dish or an appetizer.

Chicken Sizzler

Chicken sizzler is just such a super amazingly happy dish. I feel your hunger just grows by a 200% , seeing that sauce sizzle on that hot iron plate and the sizzling sound is so very pleasing.

Sizzler is best with boneless chicken or fish served with boiled rice and your choice of vegetables. I love the sizzlers in India, the spicy, smoky flavors at our favorite joint is just like a dream come true for people like us, who are so far away and that we don’t get halal sizzlers in USA, or at least not around us. So, for people like us, we invent our own.

So, there is a very sweet story to share as well. Mr. Parveez saw me longing for sizzler and bought me these wonderful iron sizzler pans and they were lying in my pantry closet waiting to be inaugurated. So, finally one day, while kids were at school and Mr. Parveez was working from home and I decided to test my gift. Usually, I always prefer making new things in my own time and keeping it a surprise and once I was done making it, the look on Mr. Parveez’s face is hard to express in words. I do have a picture of him but, he would not allow me to post it here …LOLzzz. It will always be treasured in my personal collection.

Chicken Manchurian [Gravy]

This one is different from the regular Manchurian, which is partially dry. This one on the contrary has enough gravy to be served with boiled Rice. I substituted Bell pepper with Big green chili or Badi Mirch to change and experiment with flavor, or if I use the right term, I did that to to make the taste different from the regular dry Manchurian.

Isn’t it funny how playing with flavors id so exciting and yet so easy, even then most of the time people refrain themselves from trying out something new or do not make an attempt to alter the taste that they have inculcated with time. But, the fact is that basic flavor of all food is the same. The difference is only with the timing of when that flavor is introduced to the dish or which member of that family you pick. Like choosing bell pepper, Green chili or ghost pepper, same family, different members and each one holds the capability of changing the taste of your dish completely.

Now, at times, people use ingredients as a substitute and new flavors are invented. I, personally do not agree to substitute ingredients unless you willingly accept to experiment with the flavor. I am against using tamarind in place of lemon. Oh! yes I know people who would do that and even then disagree that they knowingly messed up a dish.

Cooking is an art and we all know that, and the one who masters this art becomes a  very respectable artist/ chef and we all wish to be in that group and that’s the reason I created this website and the same reason why you are here. So, my suggestion is stick to the rules of nature. Switch flavors that you can imagine with your taste buds. Introduce new flavors little at a time because then you always have time to improvise. Making mistakes is acceptable but try to not ruin a dish to an extent where it isn’t edible.

This dish is an awesome option for school/ office lunch box. My boys look forward to Manchurian in their lunch box and it goes well with boiled rice.

Haala’s Chicken Lollipop

I have never met a kid or a person who enjoys chicken and does not go crazy over chicken lollipops. I, myself go overboard and hate to admit, but I go overboard when it comes to these little round juicy, crunchy creeps. After all, no one eats one chicken lollipop, NO, NEVER. In my books, if you don’t indulge and go crazy with them, you are committing a sin, BIG TIME.

This dish is meant to be enjoyed with friends/family and made enough so, everyone can enjoy to the max. I am posting a video as well that teaches you the easiest way to make lollipops out of your wings. The video isn’t just easy to follow but its the safest way to not cut your fingers. So, coming back to the lollipops. My boys love chicken wings and I would serve those on play dates/ game nights/ get together. The chicken wings I made gained so much popularity between our friends that I believe a lot of people went out of their way to be at our every party only to devour the juicy wings…LOLzzz. So once in Bangalore, my boys tried chicken lollipops and the dish just earned themselves a new fan. That’s when the mommy had to try her skills to make a new dish. Now, I make 4 different flavors of chicken lollipop but I still have not tried making something close to what my boys had tried but, I came up with my own recipes and they all are lip smacking delicious.

So if you are a fan of chicken lollipops like us, this recipe is a must try. Just like other recipes with chicken wings these will surely impress you and your loved ones.

Chicken Balls

This dish was a play date day invention. My boys had friends over, all wanted chicken, but some wanted spicy, other not so spicy and the rest preferred something with cheese. These balls have different fillings, some are filled with ketchup so they are a little sweet and sour, some have green chili chutney and some have shredded cheese. The kids loved them and it was an instant hit.
