Chicken Tacos

Mexican food is a big hit in USA. Quesadillas, tacos and Burritos are so popular and make it to the list of fast food. The delicious tacos are easy to make and no one ever seems to get bored of it. The chicken is spiced up with taco seasoning [homemade or store bought], Olive oil and lemon juice. I usually make my taco seasoning at home and you can always follow the recipe which is pretty neat to follow and make.

But you know how they say that if you ever visit Italy, you might not love the Pizza. The reason is simple, its authentic and outside the original place, food acquires the flavors of the places its cooked. So, there are restaurants that serve authentic Mexican food, but otherwise its Americanized Mexican food and that’s exactly what I tried out.

These chicken tacos are warm corn flour tortillas filled with diced marinated chicken, lettuce, chopped onions, jalapenos, white garlic sauce, hot sauce, chopped tomatoes and cheese.

My reason behind trying these tacos was simple. We can only consume Halal Food which makes Chicken from restaurants unconsumable for us, therefore, anything that requires chicken or meat is something that I cook at home. The flavor of the chicken is mainly from the Taco seasoning which can also be used for Fish or Shrimp tacos.

The Tortilla is homemade simply by making a dough of corn flour and water and with the help of Tortilla maker, which was a gift by Mr. Parveez years ago and never used. So, finally I decided to put it use. There is another funny story to this. My mom loves ordering things from Teleshopping. So, years back around end of 90’s she ordered a Roti maker and this tortilla maker reminded me of that, except tortillas are easier and nicer. I believe the wheat flour ends up being very chewy and therefore a regular Indian chapati was a misfit, on the other hand Corn flour comes out great. So, I would suggest you buy one for homemade perfect Tortilla. Nevertheless, if you are always on a run, you can use store bought.

This recipe is great for a nutritious, easy and fast meal, good option for schools, trips, after game meals and endless times when we moms look for a healthy and fast option and something that our kids consume without a fuss. Enjoy!!!

Chicken Hari Bhari Udaan

Doesn’t the name sound super funny? Or weird? Well, I will tell you the story behind the name. To start with, this recipe is completely made up by me. Now you might think, that isn’t a big deal for someone who presents herself as a chef. Yeah, probably not. But the things used to make this dish were the Chicken wings which otherwise are only used for recipes made with hot sauce or masala. So when I thought of coming up with a name. Chicken wings added the ‘udaan’ which means flight, Chicken of course is Chicken, and since I used Green masala, it’s “Hari Bhari”…I am sure you will love the recipe as much as the name.

This dish is super spicy. While making it I could feel the rush to taste it and when I did, it was one of the most amazing flavors I have ever created. Just make sure that if aren’t the bravest of heart then you need to keep a glass of water next to you.

This dish is made from the heart, there was no basic recipe, nothing that I have tasted before, nothing similar seen or heard of either…. just something I wanted to cook at that moment. If you enjoy spiced-up food and enjoy something that makes your mouth sizzle for a few hours after you have consumed it, this is a must-try.

I had Chicken wings and boneless chicken and I felt like combining both with loads of spice. Do you ever have a spice craving? I do, Big time, and even though I know it would hit me hard later, but I want my taste buds to party and feel satisfied as well… As much as I love different spices, spice mix with coriander leaves, mint leaves, and green chilies have always been my favorite. In this dish, I also added Black pepper powder with some whole spices and most importantly, the green chili sauce and Anardana powder.

Fennel seeds to me are a little underestimated and I believe they add a lot of fragrance to your spicy food, just like cardamom powder to your sweet dishes, and even though adding it to your dish in the initial minutes makes your house smell like a fancy Indian Restaurant, not a lot of people use it.

I used Chicken wings and little boneless chicken, but you are free to use any chicken with or without bones. Just that if using Chicken with bones, it adds more flavor since the sauces extract juices off the bones. Any which way you make it, this dish is will surely make your mouth water. You don’t have to stick to Chicken, you can also try the sauce with Fish, preferably something that is not very strong in taste, something like Haddock or Cod Fish or Whitening fish would be a better option. For the vegetarian option, you can always use Soya chaanp or Paneer, or Tofu. The sauce mix is great and is a fabulous mix for any protein preference you like.

Chicken Cheesy Tikka

Chicken Tikka has always been my go to recipe whether I have to make quick kebabs for the family or friends or even if we decide late in the evening to have a barb-e-cue dinner, Chicken Tikka is always the easiest, safest and yummiest recipe to go to. The flavors can be any which way you want. The boneless chicken pieces easily absorb the flavors quickly and the result always comes out delicious, unless you are determined to mess it up, otherwise its hard to mess up the chicken marination.

This recipe is a chef’s fluke or should I say determination of make sure I make something using shredded cheese, making sure the kebabs are soft, but also making sure that the boys taste no cheese. Isn’t it funny, life as a mom who loves to cook but is restricted by the weird taste buds that won’t allow her to experiment with flavors stressing on the fact that their peculiar taste buds won’t allow them to enjoy their favorite tikka. Therefore, this recipe was a challenge, and if you are sailing in the same boat as me, this recipe is for you.

The chicken I used is boneless chicken breast and Chicken breast tends to go a little dry and cheese helps it stay moist and juicy. I love kebabs that have that crunch top and is super moist inside.

Chicken Kheema Boti

Some dishes are just so good when you try them once that you have to try recreate that magic. I was in my hometown Jodhpur and I was eating out at a local not so famous restaurant with my mom and boys. We placed an order for appetizers while we decide the main dish. The appetizers came in and we weren’t too happy but it was too late for us to walk out and eat somewhere else. We ordered a chicken curry with some basic naan, expecting that something that simple would be hard to go wrong.

To our surprise, the chicken curry was much better than we expected. The chicken curry we ordered was supposed to be with minced chicken. But instead of mincing the whole chicken, the curry had 75% of the chicken minced and the other 25% was cut to small pieces. The flavor of the curry was not that good but I kind of loved the idea of how the chicken was cut.

Months later, something just reminded me that I need to try the chicken curry that way. Of course I had to work on the curry paste and spices and that’s when I invented Chicken Kheema Boti. The chicken is minced and cut to small pieces as well. The curry has tomatoes and Yogurt that makes the sauce nice and creamy. The spices like fennel powder and White pepper powder add a lot flavor to the curry. I added a green paste to the curry, which is made with coriander leaves and green chilies.

This curry can be made pretty quickly and tastes great along with Sheermal, Parantha or Naan. It can be served for breakfast, brunch or dinner. Enjoy!!!

Stir Fried Chicken

Indian Chinese dishes are pretty popular with people. I experimented this dish which c is made with crispy chicken chunks. Its lightly tossed in a spicy chili sauce.

You will like this dish if you like the Indo Chinese fusion dishes. Its wonderfully delicious and the technique in various dishes where the flavors are combined always makes the dishes scrumptious.

If you have never had this dish before then definitely try it out. If you enjoy takeout dishes like sweet and sour chicken, then you will probably enjoy this dish as well. It uses the Chinese takeout technique of ‘deep frying and tossing it in a thick sauce to coat it’ that most of us are very familiar with but uses a dark spicy chili sauce instead of the usual sweeter sauces.

This recipe is a dry chili chicken version, however if you prefer the gravy version of chili chicken then just double up the sauce recipe to make it more saucy. The type of peppers you use in this dish will be your preference, depending on how spicy you like your food. Though my kids are pretty good with taking spice, I used bell pepper and dry Red chilies to flavor it up.

I personally LOVE crispy foods, but find it slightly irritating when it when it is 60% batter and 40% chicken. This dish is lightly coated and therefore has a very light crispy exterior. This makes for a less greasy end product as well.

Korean Barbecue Chicken

We love chicken, Biryani, Kebabs, curries, soup. Its easy to cook and loved by all. I am always on a lookout for new recipes, specially recipes that can be eaten by kids from all cultural backgrounds. Indian foods offer large variety of kebabs, but sometimes kids just want a different flavor altogether, and I am always trying to experiment with different flavors.

We once went to this wonderful Korean BBQ Restaurant. We could only stick to the seafood since the chicken or meat wasn’t halal. The live BBQ was awesomely set up on our table and though they do serve with different salads and Rice bowls with sauces, but the there was nothing that we enjoyed more than the seafood. The amazing part was that the seafood they got was not marinated, and they carried marination sauce bowls that they would brush on the seafood and this was the first time I ever came across a marination that can be put directly while the food is being cooked. That’s when I felt I had to try this at home with Chicken or meat, and that trying turn finally came after almost a year.

I marinated the chicken slightly with salt and vinegar. The Indian me wanted to add a little ting to it before I started cooking it. It was lovely making the sauce, I tried to make it as close as I could to what I had tasted. the kids loved it and it can be made with ease and in when you have little time in hand. There are some modifications to make it look pretty, you may or may not. Enjoy!!!

Chicken Hero Sandwich

This sandwich is a popular Italian-American fast food. Its not one of those signature Italian dishes like a bowl of pasta, but more of the Americanized Italian dish, which is basically a combination of fried chicken with spiced up marinara sauce, cheesed up between a Hot dog bun or sliced baguette. Adding a few sliced onions is always great, but its a personal preference.

Now, we cannot eat chicken outside and every time I went for a Hero Sandwich, it was always with shrimp and I was always curious of how amazing the chicken one would taste. So, when I thought I hacked the taste and could make my own, I decided to try them with chicken.

Marinating the chicken with eggs and milk, make it stay moist and adds a little tangy flavor because of the lemon. That ways when you coat the chicken and fry it, the chicken inside isn’t bland, tasteless and dry.

The chicken after frying can be mixed in with the marinara to make it juicy and increase the flavor. Chicken once cooked this way can also be served with pasta, but since I am a big fan of sandwich and its always easier for my kids to eat a sandwich, I usually prefer it this way.

Making of Marinara sauce at home is pretty simple too. Being from India, I tend to make my marinara sauce a little spicier, but you can always turn it down if you are following my recipe for making marinara sauce at home. Secondly, a store bought marinara sauce is equally good, all you need to do is add a little onion powder and garlic powder to it, and if daring enough, a few chili flakes.

This recipe is great for kids lunch boxes and makes a great weekend lunch/brunch too. Hope you enjoy the recipe as much as I do.

Burrito Bowl

When you live in a country far away from home, you tend to dry more of different cuisines in order to blend in. Ohh yes! You read that right. We as Indians try our level best to try and blend in sending our wonderful taste buds on a toss. See, believe it or not, Indian cuisine is one of the most wonderful cuisines you can come across. So many varieties of food offered by one country where the food palette from one state to another differs as much as countries in Europe.

Now, I don’t mean to look down upon other cuisines but I do feel very proud of my ethnicity. Having tried so many different spices, oils, vegetables is an experience of its own. So, coming back to living in America, we tend to please people around us and not or taste buds. Indian food with spices is actually a very healthy option for guilt free food. Leaving that we indulge in butter and cheese based cuisines coz that satisfies the masses and we want to be one of those. But for those of us, who yearn for meals with similar taste, Italian and Mexican food come the closest.

Being a Muslim and eating only halal, our best bet for food is either vegetarian or seafood. Also, not trying food made by people who do not stick to the rules of a cuisine and make it in a fusion way is not my cup of tea. So, people like me, who want try that authentic Mexican chicken rice bowl from their favorite Mexican restaurant, eat fish and try to cook same flavors with chicken at home. I tried my level best to stick to Mexican flavors to get the authentic taste. Hope you enjoy it as much as I did.

Murgh Paras Kebab

I love reading and its funny but I can read anything if I don’t have much of an option. One such time was while we were travelling and I came across a book that was based on cuisines from Kashmir. Though the book didn’t have any recipes but I did come across the ingredients mostly used and that Murgh paras kebab is popular chicken kebabs using kasoori methi and eggs as the main ingredients. The rest are what I felt would make the dish flavorful.

This dish is not very spicy and the taste on bell peppers and onions add a very earthy flavor to the dish.

Chicken Methi Masala Boti

This is a lovely side dish that goes well with dal-chawal. I love the flavor of kasoori methi with chicken and therefore, you will see it finding its place in a lot of my recipes. The fact is that even a spoon enhances the flavor of the dish and brings out the flavor of the spices as well.

These kebabs are easy to make, little crunchy on the side since we add a little corn starch to it, soft from the inside thanks to the yoghurt and absolutely flavorful. If you are looking to impress guests or just have a little fast track kebab on the side at your dinner table, this is your go to dish.

Its an easy one to make so if you are a new cook, try this one.
