Chicken Baida Roti
Chicken baida roti is an easy and scrumptious dish that can be served as a snack or light lunch. Chicken stuffed in the roti, folded into a square and cooked until crispy. Chicken Baida is similar to Katlamma. Chicken keema cooked with the spices and stuffed in the paratha. Its great by itself, without any sides or serve it with chutney. It is an excellent kids lunch box option. The stuffing and dough can be prepared ahead of time and stored in the refrigerator and make it into a parantha the next morning for a lovely school lunch. It makes an excellent Sunday/ holiday lunch for me. My kids and hubby love it. Even this is a favorite on play dates when my boys have their friends over. So make it, its easy and will be loved by all ages….

Instructions
  1. 1. For the dough: In a bowl, add maida, salt, oil and mix well. Add water slowly and knead a soft and firm dough. Cover and rest the dough for 20 minutes. .
  2. 2. In the mean time, start preparing the stuffing. In a pan, heat oil, add zeera. Let it start crackling.
  3. 3. Add Ginger garlic paste. Saute till the raw smell goes away.
  4. 4. Add chopped onion and cook until the onion becomes soft.
  5. 5. Add turmeric powder, Red chili powder, garam masala and coriander powder.
  6. 6. Add chopped chicken, saute for 5 minutes and add 1 cup water. Cook until the chicken gets cooked thoroughly.
  7. 7. Add the chopped coriander leaves and green chilies.
  8. 8. Cook till its completely dry.
  9. 9. Make small portions of the dough, by dividing the dough into small equal sized balls and roll each ball into a thin and flat circle.
  10. 10. Place a spoonful of chicken stuffing, and fold the edges into a square shape roti.
  11. 11. Heat a pan and put 2 to 3 tbsp of oil in a skillet and place the folded roti and cook on both the sides over a low to medium heat until the color changes to golden brown.
  12. 12. Cut the chicken baida roti into a half or small square bite size pieces and serve.
  13. 13. You can serve it by itself or with green or garlic chutney. ENJOY!!!
