Chawal ki Kheer

Chawal ki Kheer is one of the most beloved traditional desserts across Indian, Pakistani, and Bangladeshi homes. Whenever there is a celebration or special occasion that calls for kheer, it is usually this classic rice pudding that finds its way to the table. Among the many varieties that exist, Chawal ki Kheer remains the most cherished and widely prepared.

My love for this dessert probably began the moment I could taste food. To this day, I have never come across anyone—chef, cook, or otherwise—who can make Chawal ki Kheer as beautifully as my mother. As a child, I would eagerly wait for the days when she decided to make it. Just one spoonful was enough to make anyone feel as if they were tasting something heavenly.

The funny part is that I rarely liked anyone else’s kheer. In my young mind, every other version felt like a complete injustice to the dish. I simply expected everyone to work harder and make it exactly the way my mother did. Of course, as a child, I never truly understood the effort and patience she poured into making it.

It was only when I grew older and began exploring the world of spices and cooking that I realized how much time and dedication went into preparing something so wonderfully delicious. That realization also explained why, every Eid, I would suddenly see relatives and friends appear whom I had not seen all year—each one requesting my mother’s special kheer.

To understand the scale of her cooking, you first have to understand our family. We are a large extended family of nearly 150 members. My grandfather had nine children, and each of them has a large family of their own. By the time I was still in my teens, many of my aunts already had grandchildren. Add distant relatives and close family friends to that number, and you can imagine the size of our gatherings.

Preparing kheer for such a crowd was no small task. My mother would often start with 40 to 50 liters of milk—sometimes even more—and slowly cook it down until it reduced to about two-thirds of its original quantity. This step alone requires immense patience. The milk must be stirred constantly to ensure it cooks evenly and does not burn at the bottom, all while being kept on a gentle, low flame.

The technique she taught me was simple but brilliant: stir once in a circular motion, and the next time in the shape of the number eight. Only when I grew older did I realize how perfectly that method covers the entire base of the pot.

Once the milk is reduced, cashew powder is added. It not only thickens the kheer but also lends a delicate sweetness and nutty flavor that enhances the dish beautifully. Chopped almonds make a lovely addition as well. Some people also add khoya or khoya powder for extra richness, though that step is completely optional.

For the rice, I prefer small-grained varieties because they cook faster and are easier to mash, giving the kheer its signature creamy texture. Kani ke chawal, Kaima rice, or any other small-grain rice works well.

My mother always added condensed milk to her kheer, and many people believed that was her secret ingredient. But in truth, the magic was never in just the ingredients—it was in her hands, her patience, and the love she put into cooking. Ingredients alone do not make a dish extraordinary; it is the care and effort of the person preparing it that truly brings it to life.

This is the method I learned from her. I may never match the perfection of my mother’s kheer, but every time I make it, it still turns out wonderfully comforting. And with each spoonful, it brings back memories—and the irresistible urge for just one more bite.

This is a wonderful way of making Kheer. I am still not as good as my mom when it comes to making it but it still comes out delicious and each spoonful makes you crave more.

Murgh Haleem

Haleem has originated or is inspired by an Arabic dish, “Harees” which is made with meat, ghee, wheat, rice and whole pulses. The Persian name for the meat – wheat dish is “Hareesah”, which unlike Haleem is bland and uses lesser amount of pulses as well. An author once also suggessted that the version of Haleem made in India should have its name revised as “Daleem” since it uses a variety of Daals / Pulses.

Like so many other dishes that proudly make a mark in Indian/Pakistani/ Bangladeshi cuisines, Haleem was also introduced to Hyderabad recipes during the Mughal Era. The research shows that it came to Hyderabad during the Mughal period via Iran and Afghanistan. Adding the local spices and ingredients to it was definitely an upgrade from the original Arabian dish.

It says that it was during the rule of the sixth Nizam, Mahbub Ali Khan when Haleem was being revised to suit the Indian taste buds. The addition of spices made a huge difference to the dish and it did take effort and time to make it what it is today. By the the time, the seventh Nizam Mir Osman Ali Khan made his way to the throne, Haleem had become an integral part of the Hyderabadi cuisine.

With time, it became popular amongst all Muslim rulers and royal chefs made few changes here and there to make it more appetizing. The basic Haleem recipe comprises of a variety of lentils, meat/ chicken , and spices which are pounded together and cooked on a low flame for about 12 hours, which in todays time and age sounds time consuming and insane. Even today, if you wish to taste autjentic Haleem, you will have to take a trip to the Muslim areas of popular cities and visit those restaurants that are popular for their food and do not care much about the ambience. Honestly, I call them food lovers Paradise. As soon as you are close to those places, you can follow the fragrance of delicious food with your eyes shut. If you are like me, and can ignore the tables put close together and with people staring at you while you eat, you should visit these places at least once when you are in these popular cities. Delhi’s Jama Masjid, Mumbai’s Mohammed Ali Road, Hyderabad’s Char Minar and Bangalore’s Frazer town is where you will always find authentic Muslim cuisines which are pocket friendly and wonderfully delicious. These days you will also find places where they offer great seating arrangements for families as well.

However, the local spices give the Hyderabadi version a peculiar taste and flavor. I once saw a TV show based on Hyderabadi cuisine and watching Haleem being cooked was a delight. Haleem is prepared using Daals, mutton/Chicken, Broken wheat, Rice and a blend of spices. Everything is cooked together and then mashed together to bring in the perfect taste. Haleem has to be prepared in Ghee. It definitely is high in calories but its nutritious as well, and that’s what makes it the perfect dish to open your fast with. Even today, traditional Haleem is prepared in Brick – mud ovens or Bhattis on firewood and takes anywhere between 8-12 hours to be prepared. Basic Haleem recipe only used Mutton, but with time, chefs added more variety and Chicken Haleem or Murgh haleem came out as a lighter version of the traditional Haleem. I love both, but Chicken Haleem seems to be liked more in my house and therefore is cooked more often. I am sure you will love the recipe as much as we do. Enjoy!!!

Rice Pongal

In a world of amazing flavors and lip smacking delicious food, at time we all crave something that’s yummy, simple and easy to make. Sometimes, and trust me, with someone like me most times I am always looking around for get set go recipes.

So, the story is. Yeah, of course there is a story. Every dish simple, plain, easy, tough, but if they are made by me there are always incidents or stories that connect them to me. No idea why but there are always scenes that pass through my eyes like a movie making me remember when I first saw, or tasted this dish or why am I inclined towards making it and after that each time I make that dish along with the reactions I get is what gets stored in my mind…Weird ??? Totally…LOLzzz

So, for this simple and scrumptious dish, the story is that my Mother in law is a big fan of Pongal. After Mr. Parveez and I got married and every time I traveled to India, we would have family vacations and most of them would be not to far, for instance since we are based in Bangalore, we would always take a trip to Ooty. Now my MIL isn’t a big fan of outside food. In fact she is very precise with her orders and with time I discovered that she mainly always orders dishes that are simple, because her logic is that restaurants always keep fancy dishes stocked up, so if you like eating fresh food, always order something nutritious that barely needs time to cook. Pongal was something she could every single day without a fuss.

Now with Pongal, its definitely a dish that barely needs any prep time. Its simple on the tummy and since it is runny, it can be served to small children as well, just minus the fancy additions we made to our Pongal.

Grilled Salmon with Roasted Veggies

On days when you want flavor, variety, not spend too much time cooking and with all that you want a dish that everyone in your family enjoys. This is a dish when you serve your kids a super healthy meal without compromising on taste.

Salmon is our family favorite. Any day, any time, school day, home day, dinner, Lunch, friends, Salmon is my go to dish. I believe once I knew how to make it correctly, there was no looking elsewhere. Its amazing how kids just grasp so many flavors from you and you just know if you like something, they would like it too. When the grilled/pan fried Salmon makes it to my kids lunchboxes, it just doesn’t excite them, but their school friends too. I always have their friends requesting for certain dishes on play dates and Salmon happens to be one of them.

Jokes apart, we are a family who love seafood and a lot of that comes from my Father in law [May his soul rest in peace]. Mr. Parveez gets his seafood freshness checking skills from his father. He tells me stories of how his Abba would take him along to the fish market and teach him how to find if the fish is fresh or old. So, using those awesome skills he always makes sure we get the fresh catch and as much as I always tell people that frozen fish can be used, there is nothing better than fresh ones. You will know once you try it.

So, this day when we planned on having grilled Salmon, the option of making tortillas at home along with Rice and beans is always better than getting store bought Tortillas. Though usually tortillas and Rice make you very full, but it wasn’t one of those days where we wanted to fill up. One look to my veggies in the pantry, the carrots, sweet potato and bell peppers, all just looked to good to say no to. I might sound funny to you while you read this, but the fact is some days veggies seem like the best option with your protein and its actually a very good one too, and you feel lucky to have your kids gobble down those veggies.

So, if you are a mom like me, who has those days where 30 minutes is all your gang gives and you want to make something flavorful, healthy and filling, this is it!! Enjoy!!!

Burrito Bowl

When you live in a country far away from home, you tend to dry more of different cuisines in order to blend in. Ohh yes! You read that right. We as Indians try our level best to try and blend in sending our wonderful taste buds on a toss. See, believe it or not, Indian cuisine is one of the most wonderful cuisines you can come across. So many varieties of food offered by one country where the food palette from one state to another differs as much as countries in Europe.

Now, I don’t mean to look down upon other cuisines but I do feel very proud of my ethnicity. Having tried so many different spices, oils, vegetables is an experience of its own. So, coming back to living in America, we tend to please people around us and not or taste buds. Indian food with spices is actually a very healthy option for guilt free food. Leaving that we indulge in butter and cheese based cuisines coz that satisfies the masses and we want to be one of those. But for those of us, who yearn for meals with similar taste, Italian and Mexican food come the closest.

Being a Muslim and eating only halal, our best bet for food is either vegetarian or seafood. Also, not trying food made by people who do not stick to the rules of a cuisine and make it in a fusion way is not my cup of tea. So, people like me, who want try that authentic Mexican chicken rice bowl from their favorite Mexican restaurant, eat fish and try to cook same flavors with chicken at home. I tried my level best to stick to Mexican flavors to get the authentic taste. Hope you enjoy it as much as I did.

Kashmiri Murgh Akhrot Biryani

This dish is cooked with Chicken/ Murgh and Yogurt on slow fire. Dry fruits like raisins and walnuts native to the beautiful state of Kashmir, add a distinctive flavor to it.

As the month of Ramadan begins all over the world, Biryani is a feasting dish perfect for Ramadan Iftaars, the celebration that rounds up Ramadan. A biryani of some description is always a regulation dish at celebrations, and the Kashmiri version is one of the many that needs to be a part of the Muslim tradition.

This version of Biryani is often preferred as it is rich and made even more special by the use of raisins and walnuts. I believe making different versions of Biryani also has a lot to do with the status of the family, this dish is judged by both the quantity and the array of nuts and dried fruits included.

I have always loved movies based in Kashmir ki waadiyaan. The idea of romance on a row boat is very fascinating. On one side, where the Gandola rides in Venice are considered romantic, my idea of romance still goes back to the beautiful shikaara rides with flowers around. I really wish to take that ride with Mr. Parveez some day. Till then, trying to cook cuisines from my favorite places is something I enjoy doing.

The first time I tried the Kashmiri Murgh Akhrot Biryani was one of my Friday Iftaars. Though I try to stay away from experiments during Ramadan, Friday Iftaars are a different story. My tables are lavish and my dastarkhaan has food in large variety and quantity to feed the whole army. My kids love our Friday Iftaar and somewhere look forward to Ramadan, for the lavish Friday Iftaar.

This dish has a lot of influence from the Persians. Most persian dishes are made using loads of dry fruits and nuts with meat, but with the addition of spices, the flavor of the dish changes, hence makes a Kashmiri Biryani.

This Biryani seemed rich in flavor as I mentioned before. The spice level is less, since the region of Kashmir has most of their spices come in from Saffron and cinnamon than chili. Its very pleasing to the eyes since the presentation has loads of raisins and walnuts garnished. In all, a fabulous dish and very flavorful.

Bisibelebath

Bisibelebath is a traditional south Indian breakfast. Growing up in Northern India, I realize that I never knew this dish existed. To me Masala Dosa, Rava Dosa, Idli and Sambhar were South Indian food and my knowledge never went beyond that. After I got married, I discovered the food heaven that South India offered. I was not just amazed but, also surprised that the food had the never ending variety.

Bisibelebath is one of Mr. Parveez’s favorite dishes. I would always see him order and relish the dish at our favorite restaurant in Bengaluru. Unfortunately, we do not find the dish as commonly in restaurants in United States, and some restaurants that do serve, do not make it correctly. Therefore, I started cooking my own. The best compliment is when I don’t see Mr. Parveez enjoying the restaurant cooked Bisibelebath as much as he enjoys mine…LOLzzz. As much as he hates it when I tell him that [you know wives have the “wife sense”..LOLzzz] .

Mr. Parveez believes that no matter what I make at home, when he eats the same dish outside, he expects me to completely ignore the fact that its something I can cook and stay away from asking any questions related to the dish. So, now all I do is take a bite and be thankful, that I can make better.

This dish is basically Rice and Toovar daal cooked together and then mixed with boiled veggies and the Bissibhelebhaath powder, along with a little jaggery and Tamarind. Fimally tempered with South Indian tempering of cumin seeds, Mustard seeds, asafoetida, curry leaves and a few cashews. Serve hot/ warm with something crunchy.

Chicken Sizzler

Chicken sizzler is just such a super amazingly happy dish. I feel your hunger just grows by a 200% , seeing that sauce sizzle on that hot iron plate and the sizzling sound is so very pleasing.

Sizzler is best with boneless chicken or fish served with boiled rice and your choice of vegetables. I love the sizzlers in India, the spicy, smoky flavors at our favorite joint is just like a dream come true for people like us, who are so far away and that we don’t get halal sizzlers in USA, or at least not around us. So, for people like us, we invent our own.

So, there is a very sweet story to share as well. Mr. Parveez saw me longing for sizzler and bought me these wonderful iron sizzler pans and they were lying in my pantry closet waiting to be inaugurated. So, finally one day, while kids were at school and Mr. Parveez was working from home and I decided to test my gift. Usually, I always prefer making new things in my own time and keeping it a surprise and once I was done making it, the look on Mr. Parveez’s face is hard to express in words. I do have a picture of him but, he would not allow me to post it here …LOLzzz. It will always be treasured in my personal collection.
