Pull Apart Long Buns

My boys prefer home lunches and also love varieties for their lunch. When I use the word variety, I mean that they would not want a dish to be repeated in 2-3 weeks and believe it or not, its a lot of pressure to make something that tastes great and that they would love it as well.

These chicken buns are easy to make and can be easily made by beginners as well. The chicken does not have to marinated for too long and even the process of marination is with pretty simple ingredients. This is great dish if you have boneless chicken available and haven’t thought of anything in mind, and need to get things ready in a rush.

My boys prefer this in the hot dog bun Sandwich, but this chicken would taste great even with a tortilla and Roti wrap too. I have tried them with ciabatta, french long bread and croissants as well.

I usually make this and serve it with a different spicy sauce . The recipe for the spicy sauce is in the sauce section. A blend of mayo, ketchup, hot sauce and mustard sauce goes perfectly with this spicy shredded chicken to give that kick to this sandwich.

Salmon Tortilla Wrap

The family that loves fish, finds each and every way possible to get their fish on their dish….Yeah!!! Please ignore my not so funny sense of humor rhyming the words…LOLzzz. My boys love the fish rolls or wraps for school. Making Salmon Tortilla roll is one of their favorite school lunches.

The Salmon needs to be lightly marinated and can be pan fried till crunchy. The marination is simple with garlic powder, black pepper, turmeric [optional, I prefer it], salt, lemon juice and dry parsley. I like my marinade to be simple, since Salmon has a very strong itself. The light marinade helps Salmon have its own flavor and the other spices help enhance it more.

I have people always question me as to why I never try making my Salmon like my other recipes for Indian style fish fry. Believe it or not, just like fishes come in different flavors, adding same spices to 2 different fishes while makes one taste amazingly delicious, makes the other one lose its flavor. Fishes like Mackerel have a very strong fishy flavor. Adding strong spices to a Mackerel and deep frying it after rolling it in refined flour makes it a scrumptious appetizer, where as if I try the same style of cooking on Salmon, which also has a very strong fishy taste would not taste that good. I have been to a few restaurants that serve Salmon cooking it like a fritter/ Pakoda or rolling salmon fillet in flour and serve it as a patty for Burger. I strongly felt that Salmon in such styles loses its taste. Salmon has a wonderful outer texture that makes it super crunchy when you shallow fry it and its best this way.

I always throw in some veggies like shredded cabbage, or chopped lettuce with sliced Onions and sliced tomatoes. Pair the crispy Salmon with the fresh and chopped veggies and sauces makes it flavorful and if you are making them for your kids, its always a great way to sneak in those veggies.

I added corn, that I had boiled and then saute’ed them till slightly crispy. My corn kernels were fresh. I took them off the cob after boiling the corn. It just gets a little easier to get the kernels off. You can always simply saute’e them in a pan by adding a tsp of butter/oil. You can also add a little garlic powder and chili flakes and add that zing to it.

Sauce can always be changed according to your taste. I added the mayo-garlic sauce and hot sauce, but I think mustard sauce or green chili sauce would be good too.

Braided Cheese Spicy Rolls

These delightful braided rolls are a great accompaniment to any meal, specially the brunch or lazy lunch days. The coarse chili flakes isn’t overpowering. I could have used this dough to even make burgers.

Its lovely to experiment with breads at home. The trick I learnt with time is that if your yeast doesn’t rise, redo it. A yeast that does not rise won’t make your dough airy and won’t make the dough rise. Generally, when people add the yeast directly to the flour, its advisable that you use instant yeast.

Besides the yeast, before you get pro at baking breads, always make sure you read the recipe and all the instructions properly before you start. Don’t believe anyone when they tell you how difficult it is to make a great bread or pizza crust or rolls, because trust me, it isn’t as difficult as it seems. Making good bread is an art, but it can be easily be learnt.

Lucknowi Murgh Tangdi

Lucknow offers some super amazing delicacies. The old time Awadh offers numerous vegetarian recipes which are delicious and mouthwatering. And since, its also the city of Nawabs, the Non vegetarian dishes are equally delicious if not more. With all my respect to my vegetarian friends, the non vegetarian food from Lucknow is one of the main reasons why people still visit.

I remember visiting Lucknow with my parents in 2002 and tasting the super yummy Tunde kebab and awesome Biryani. Too bad, we were just there for 2 days and I am sure there was a lot to discover in the food section. Please do try the Lucknowi Biryani and Lucknowi Tunde kebab recipe too.

Nevertheless, from what we tasted, it was like a party in our mouth. One of the best things we tried were Tangdi Kebab and with a lot of research and trial and errors, I was able to get what I had tasted.

This dish fairly easy and the cooking process isn’t that tough to follow so, if you are a newbie, this should be a good one to try.

Malaysian Chicken Satay

We love Malaysian food. The taste is so close to Indian and yet has its own flavors. I have tried making different cuisines and so far, after Indian and Mughlai, Malaysian is my all time favorite.

Chicken satay is a great kebab recipe, specially with kids. The marination is simple and does not have to be kept for long either. The kebabs come out spicy so, if you like them to be mild, you could either use less of the spice or add a little cream, roughly 1/4 cup for 1 lb of chicken. The flavor would definitely change and might not taste as authentic as the real Malaysian satay but it would still be nice and would be the closest you can get to the dish. I actually prefer adding less spice.

This is great for calorie conscious and diet needs. Its high in protein and does not require any flour coating so its quiet healthy.

This is great for tea or coffee parties, play dates, quick bite and unannounced guests. The level is great for beginners and can easily be made for those pot lucks as well.

Chicken Seekh Kebab 2

These chicken seekh kebabs are fast track and guilt free. I made them one day when I was running short of time and I wanted something not too fancy, or heavy but something nice. I am sure we all go through one of those days when we want to eat something nice but then time is short and we don’t want to consume that makes us feel bloated.

And the fact is that Mr. Parveez always prefers his lunch to be something nice, yet light. You might be confused thinking that being husband to a wife who could spend her life time in the kitchen, how does he manage to think this way. Well, let me tell you, Mr. Parveez is a food loving guy but he is also a Man of self control. He has his days, with Biryani and gulab Jamuns to name a few, but, he never goes over board with rest things. He would make sure he eats within limits. And to make sure nothing tempts him, he always asks me to come up with less oil/ no oil/no carbs versions of food and I take them as a challenge and invent the best to my capability.

So, it was one of those days and I managed to come up with this recipe. Its great for on the go lunch, lunch boxes, light dinner and kid play dates. Its a great dish if you are carb conscious or a health freak.

Chicken ke Seekh

A lot of people these days are giving up on red meat for health reasons. Though we do not consume Beef at all, and most of my red meat is either Goat or Lamb, a lot of my friends do not consume red meat altogether. Considering that I came up with this recipe of Chicken ke Seekh.

Though nothing beats the juicy lamb when it comes to seekh kebabs,  but this recipe does satisfy your taste buds without a fuss.
