Cinnamon Rolls with cream cheese icing

These cinnamon rolls aren’t just easy to make but, are also super fluffy and light, better than any store bought roll…Trust me. These would melt in your mouth and melt you heart too…

Honestly, yeast and I aren’t very good friends. It actually used to scare me to use yeast and I have had so many failures with yeast, that I have lost count. But then, I couldn’t give up my love for baking breads and decided to get to know “Yeast” better and learn to work cordially. We’ve been best friends since then….LOLzzz. I know my stories are sometimes too long and some of you might just want to jump to the actual dish than to play around and read the stories. But you know what, this is what would connect us. Every food has a story and mostly, its worth remembering and sharing, even if the dish is a disaster.

So, this is the story to this wonderful dish: I realized that would see cinnamon rolls EVERYWHERE. We go to the mall and Mr. Parveez would buy them. I see my boys head over heels in love with them. I see my little one craving for more….and sometimes all these are signs that you have to be on a mission and make your own. So, I start my search to get an authentic recipe  and found some wonderful recipes, all very different from the other. I decided to pick and choose and make my own. First Batch, a BIG disaster  and I made changes. Second Batch, a few more changes…a few more after the third. Fourth batch, the cinnamon rolls were perfect but the icing messed it up and finally, fifth batch, they came out perfect. This recipe is fool proof and something that you will save and love and pass on.

 

With regular cinnamon roll recipes, there’s so a lot of waiting time for the yeast to rise and to be sure that the dough would turn out perfect. Honestly, as much as I enjoy cooking, I do not have the time and energy to wait that long. I love making things that can be served in less amount of time. Something, that’s clean, cooked with love and effort without wasting too much time. But, that doesn’t mean I would try a recipe where cinnamon rolls are made within an hour. I like to give my food flavors time to mingle too.

I’ve managed to meet these soft cinnamon rolls in a little prep time with a faster procedure and made sure that they stay soft, fluffy and wonderful.

P.S. Don’t let the yeast scare you. It takes time to open, but once you know it well, you will love it just like me.

Choco Cookie Vanilla Shake

I have kids who happen to love Ice creams, because they are just like me…LOLzzz. I look for ways to make different flavors in Ice creams and milkshakes. A scoop of ice cream in your milkshakes not only makes your milkshakes taste better, but also more slushy and creamier.

Most times when we drink milkshakes at a restaurant, we feel that it never tastes the same at home. The difference comes from the milk and few other ingredients. Simple changes and few tricks make a big difference to the taste and you’d be surprised with how a simple switch can make a huge difference.

Generally, with fruit smoothies or milkshakes, fruits used are frozen. If you are using fresh fruits, try freezing them for 15 minutes before use. If you can’t, then make sure the milk you use should be very cold, keeping your milk in the freezer for 30 minutes should give you great results.

In this milkshake, I threw in a batch of chocolate chip cookies, vanilla ice cream and chocolate syrup. I even spread some chocolate sauce on the glass for decorating a little more.

Chocolate Chip Pancake

My boys love their weekend Breakfast. Their school day breakfast is pretty simple, consisting of boiled eggs or a fruit with milk. But Saturday and Sunday are always special for breakfast and that’s when I make them waffles, Pancakes, Biscuits etc.

Initially, I used to make simple pancakes and with time adding different variations to the Pancakes, I added chocolate chips to the pancake and poured some chocolate syrup on top. The Pancakes come out fabulous and your kids are surely gonna love them.

Chiroti Khajas

I have mentioned in my other food stories of how my better half, Mr. Parveez has loads of stories of his different food flavors that he has experienced since childhood.

One of his childhood favorites were Khajas. Khajas are also known as Chirotis down south. Now, let me get this straight, I had never tried khajas before, so when Mr. Parveez told me the story about Khajas, the explanation was, “Its has layers, its fried and its sweet”. According to him the details good enough but imagine getting these details for something you haven’t seen or tasted.

But, when Mr. Parveez demands something, I have to try and do everything to make it for him. Cooking for him, specially what he demands give me immense happiness. I get a kick out of it….LOLzzz.

So, basically I was still clueless as to what he expected and just went ahead with what I understood and the result was a disaster. They were too soft, chewy and absorbed too much oil and were nothing close to what Mr. Parveez desired. But, I can’t give up so easily, therefore there was a second try and this time I made sure I do proper research before a try.

Mr. Parveez always called them “Khajas”. While doing my research, I found that they are widely known as “Chiroti”. Reading various regions making it, I not only understood how to make them, but also got an idea of so many variations in them.

This recipe that I am sharing is fool proof and very easy. Loved by kids and adults. Do try it.

Badaam Kulfi

Kulfi is an Indian Ice cream and is favorite to ice cream lovers. My family has always loved eating or ordering kulfis from our favorite kulfi shop. There used to be one particular Kulfi shop that sold the best “marwari kulfi”. That shop is still by the clock tower in Jodhpur and it still sells the most authentic marwari kulfi.

Though in last few years, a lot of new ice cream shops and kulfi places have opened and become popular too. But, for people like me, we still go back to that old shop to get the traditional and delicious kulfi.

Being far away from home, we yearn to have those flavors and no matter which restaurant we go to, the kulfi doesn’t taste the same as what we get back home. I always craved for the creamy texture and nutty flavor which I never found anywhere around.

And then one fine day, I decided to start making my own. Trust me, its one of the best decision I ever took. After this, it was no looking back. I experimented with loads of different flavors and made a huge variety.

I feel there is nothing better than having your kulfi homemade. See, there is nothing that can beat the freshness, the quality of the products that you use plus the shelf time. When you buy them from the market, you have no idea how many times, they have been defrosted and refreeze again and don’t forget all the preservatives added to them.

As much as its hyped with all the recipes given of how to get a perfect kulfi, trust me there is no big deal to it. Its simple and comes out delicious. Just follow the simple steps. It doesn’t require too many ingredients and it would turn out more delicious than your favorite store brand.

Akhrot Kaju Ka Halwa

This Halwa was an idea that I had after I made badaam ka halwa, which is pretty popular in India. I felt that Almonds or badaam have been given a lot of importance when it comes to nuts, where as , walnuts are very healthy,  but not liked a lot due to their taste. Its easy to see moms feeding their kids badaam ka halwa, when kids refuse eating plain almonds with milk. Indian mothers and their never ending love that always displays in the food and the amount of food that we serve our kids. Its amusing how one bowl of badaam halwa takes place of 7-8 almonds/badaam…LOLzzz.

So, the mother in me wanted to feed walnuts to my boys and thats when the idea hit me. Initially, I planned on working with walnuts only, but then realizing that they might not taste as good by themselves as I would like them to.

Finally, I decided of experimenting walnuts by adding a little cashew to it for that creamy texture and nut sweetness. It did the trick. This is one of best Halwa that I have cooked. The recipe is sure to impress everyone.

Avocado Ice cream

We love avocados…healthy, fresh and tastes great. Most of the times, we used them as a part of a salad, or make guacamole and serve it with tortilla chips.

So, taking a step ahead I tried the avocado ice cream. Mr. Parveez thought I am taking it a little too far, but it ain’t gonna hurt trying, Right??? So, I decided to try. Like all fruit based ice creams, this too has very strong Avocado flavor. I was surprised when I had some friends over as guests and I served them the Avocado ice cream and one of them said, “The taste of Avocado is pretty prominent”. And, I said to myself, “mmmm, did I say mango ice cream while serving, No, it is Avocado so it will taste avocado too.”…LOLzzz

Nevertheless, I love all my friends, with their great tastes and weird tastes. Some spice lovers, some sweet lovers, some generous with compliments, other prove it by over eating. But in all, they all are lovely and wonderful.

It is pretty simple and easy to make and is perfect for beginners. Its creamy, fresh and the taste of avocado makes it even more delicious.

Mughlai Biryani

This Biryani is very close to my heart. This recipe was shared by Mr. Parveez, some 4 years ago and since then it has been a family favorite. My younger son calls it “Mogli Biryani”, since he feels that Mughlai is very close to”Mogli”, and I am sure somewhere he also believes that this recipe came in from the Jungle book…LOLzzz.

Mr. Parveez came across an article about Mughal migration and food and thats when he learnt that the initial use of spices in Biryani was actually white pepper and not the chilies. Though with time, chilies made a very special place in the Biryani recipes and no Biryani recipe seem to be complete without them, but that wasn’t the way it all started.

Black pepper has a very strong flavor and if you use it often, you would know that using black pepper even little more than required makes the taste of a dish bitter, therefore you need to be careful when handling that spice. Unlike, black pepper, white pepper is easier to handle and does not add bitterness if slightly over used.

This dish has flavors from the Middle east. it isn’t too spicy so it matched perfectly with Mirch ka saalan or Baghare Baingan or khatte Baingan. I have made this for my son’s school party for teachers and it was a big hit. You can use regular chicken cut to medium or small size pieces, though I preferred using chicken legs. It doesn’t change the taste but definitely enhances the look. I have used green chilies, but from the article that I read, it wasn’t a requirement so, the use is optional. Also the garnishing with boiled eggs is completely optional. You can also use cashews, and/or almonds to garnish if you feel like.

 

Lucknowi Mutton Biryani

Lucknow food is food of the Nawabs and I love the Kebabs, curries and of course, the Biryani. Lucknowi Biryani uses a lot whole masalas and requires the chicken to be marinated in whole spices, powdered spices and Yogurt.

I have been to Lucknow once, with my parents in 2002. Though we didn’t stay for too long, but few days were enough for me to love the flavors and food from Lucknow. I wasn’t a complete cook back then and as much as I loved the food, I wasn’t so keen about doing a research to find out or look for recipes and try them out. Its much later, few years ago when I decided to get on the band wagon of cooking varieties of Biryani and started my journey of getting minute details about everything, is when I discovered the details about the Lucknowi Nawabi Cuisine.

This particular recipe happens to be one of the most old and original recipes from the Khansamas of the Nawabs. There were a few books in Urdu that described the times of Nawabi culture and traditions and how posh the era of Nawabs were and how beautifully and exclusively served food and how delectable the food used to be. The article gave an idea of how the Khansamas marinated the meat/ chicken and the ingredients they used and following the notes, I came up with the recipe as close to the original.

I have also tried making Lucknowi seekh and Galouti kebab and if you check the Kebab section, you will find the recipes for them. This Biryani doesn’t use tomatoes, but uses a lot of coriander leaves, mint leaves and green chilies.

This Biryani is one of my family’s favorite.  This was my first dish from Lucknow and from there on, its been pretty regular in our house. This is a wonderful recipe. Like I say for most recipes, Please read the complete recipe properly before you try this out. Its a sure hit.

Kolkata Biryani

Biryani ranks at the top of my favorite food list. Whenever there is a special occasion in my house, the very first dish comes to my mind is Biryani. Honestly, Friday dinners are kind of a big deal in my house and Biryani is the main part of the dinner.

Biryani in Kolkata was introduced by Nawab Wajid Ali Shah from Lucknow. With Biryani every region and state added there own flavors, according to the produce they had in their region/ state. Nawab Wajid Ali Shah was dethroned by Britishers and deported him to Kolkata. Luckily, he was accompanied by people who worked for him including his kitchen staff. Once in Kolkata, Nawab Wajid Ali Shah tried to make a little place provided for him to live. You could take a Nawab off the throne but you cannot take the elegance and Royal heart he has. he would ask his Kitchen staff to make Biryani, and would feel low about not having enough grocery specially meat/ chicken. To make th Nawab feel better and to be able to have him feel good about feeding everyone around him with the same love and respect he had in Lucknow, the chef added Potatoes and Eggs to the Biryani. This is how the famous Lucknow Biryani added its flavors and gave birth to Kolkata Biryani.

That’s why Biryanis from different places taste so different. The basic similarity is that every Biryani is cooked with meat and rice in dumm. It’s a dish adored not just all over the sub-continent, but all around the world. Its one of the most popular Indian/ Pakistani dish. However, Vegetable/ Paneer biryani is also well accepted among vegetarians.

Biryani should ideally be prepared in dumm, where the meat and rice are cooked together in an air tight container over low flame. I have posted the recipe of dum biryani and so many different varieties of Biryani from different regions and states of India. Most recipes also have some history/ story of how the recipes were originated, which is always a delight to read, know and share.

So this time I am sharing with you an easier version of dum biryani which is followed in most of the biryani houses in Kolkata. This Biryani is not too spicy. The Biryani has potatoes  and the use of Khoya and milk makes the Biryani rich.
