Belgaum Biryani

This Biryani is a signature dish from Belgaum, cooked with baby potatoes and flavored with saffron and cream. Belgaum is a place in Karnataka and I have a sister in law who belongs to that region, but this isn’t a recipe from her though. In fact, in my family no one makes chicken Biryani combined with any vegetables.. Yupp!!! you got that correct, They are hardcore non vegetarians specially when it comes to Biryanis. Bengaluru does have the tradition of cooking meat or chicken Biryanis with carrots and peas but it still isn’t something that is seen very often or is enjoyed much either.

Coming back to Belgaum Biryani, its great for people who prefer their Biryani a little creamier with the spice and also if you like the flavors by Coriander leaves, mint leaves and green chilies but don’t like the texture between your bites. Blending them adds the flavor without you having to be cautious between your bites to not bite on that chili… The potatoes add their own crisp flavor and its beautiful in its own way.

Beetroot and Bell pepper Curry

We love curries and specially curries that aren’t made commonly. One such curry is Beetroot. While growing up, Beetroot only made it to our salads, with time I found that people even make pickles out of Beetroot. And, then after I got married, I found that its a pretty popular curry in my new home.

Like all vegetable curries, Beetroot also has loads of unique ways of being cooked. My MIL makes her Beetroot by cooking it with spices and coconut puree, which is amazingly delicious as well. I still remember when Mr. Parveez told me one of his childhood stories about Beetroot. As a kid, he would sometimes take this curry to school and since Beetroot left a little red color on his tongue and he would run around telling his school mates that he had blood for lunch…LOLzzz. Childhood is the best life we live and the memories are so fond and extremely special. The most fascinating part is us remembering everything by looking at things around us….I always love sharing these little stories, after all, every food has a story.

This recipe is one of my experiments with both my favorite veggies, Beetroot and Bell pepper.

Chicken Sizzler

Chicken sizzler is just such a super amazingly happy dish. I feel your hunger just grows by a 200% , seeing that sauce sizzle on that hot iron plate and the sizzling sound is so very pleasing.

Sizzler is best with boneless chicken or fish served with boiled rice and your choice of vegetables. I love the sizzlers in India, the spicy, smoky flavors at our favorite joint is just like a dream come true for people like us, who are so far away and that we don’t get halal sizzlers in USA, or at least not around us. So, for people like us, we invent our own.

So, there is a very sweet story to share as well. Mr. Parveez saw me longing for sizzler and bought me these wonderful iron sizzler pans and they were lying in my pantry closet waiting to be inaugurated. So, finally one day, while kids were at school and Mr. Parveez was working from home and I decided to test my gift. Usually, I always prefer making new things in my own time and keeping it a surprise and once I was done making it, the look on Mr. Parveez’s face is hard to express in words. I do have a picture of him but, he would not allow me to post it here …LOLzzz. It will always be treasured in my personal collection.

Chicken Irani Tikka

Persian cuisine has been around for many years. The kebabs from the middle east have been very popular and the mix of spices and the flavors of them being cooked with veggies gives them a different kick, which makes them differ from regular kebabs. The fact that they use spices not usually use in Indian cuisine. The taste is distinct and very scrumptious.

Chicken Golmaal

I came up with this recipe on a Friday night, returning after my son’s soccer match, with 2 tired and hungry boys. Looking at the thawed chicken on my chicken island reminded me how I assumed that I would be home by 6 PM and will have enough time to cook the chicken and I spent the time leisurely enjoying the evening traffic on NJ turnpike.

Anyways, I had to make something out of this chicken, something yummy and before my boys were done with their shower. This is when this super quick chicken was invented. The name comes after all the masalas and spices used.
