Bangalore Dalcha

Muslim families all over India and Pakistan serve Biryani. It is basically our go to dish when it comes to big occasions. Now we do have people who aren’t great cooks or who cannot make Biryani, but trust me we rank No. 1 when it comes to judging people over food and more if the Biryani is not cooked or if its not cooked properly. Yupp, we judge and please don’t go over the beautiful smile appreciating the Pulao because in our mind, we know it could have been better….LOLzzz.

I apologize for getting a little funny before but its honestly the truth. Now, getting to the biryani part. We always serve Biryani with some accompaniment. In North India, its usually with different kinds of Raita, with a variety from plain boondi, onion, cucumber or mint. Southern part of India on the other hand serves Mirch ka salan, khatte baingan, Raita and Dalcha. Each dish is equally delicious and makes your Biryani taste even nicer.

This is my second Dalcha recipe that I am sharing. The one before was the recipe from my in laws and this one is inspired by the catering service from where we order food on family functions in Bangalore. This was a time when we ordered Dalcha instead of khatte baingan and Raita. This Dalcha was very different from what we regularly make. It was called “Shaadi ka Dalcha”. Funny but true

The daal wasn’t just Chana Daal but, a combination of Toovar daal and Chana daal. The daals should be soaked for an hour or two and boiled till soft. The bottle gourd should be boiled as well. When you start cooking the Dalcha, along with the regular spices, we also add fennel seeds. The fennel seeds adds a lot of fragrance to the dalcha. Adding chopped onions, tomatoes and spices make it perfect. This Dalcha does not have pureed coconut, but garnishing with dry coconut powder does add a lot of flavor.

Though Biryani in Muslim Families is a non vegetarian dish, but its always accompanied with vegetarian dishes like these ones and you might find it hard to believe but, dishes like Dalcha taste great with plain rice as well. So, if you happen to be a vegetarian, I wouldn’t suggest you to make Dalcha with Vegetable Biryani, but it would go great with Paneer Biryani or even plain Rice.

Chicken Kalmi Kebab

The origin of Kalmi Kebab is from the Mughal era, of course, I mean where else will Kebabs so delicious can come from except for the Mughals. The Mughals introduced Kebabs to the Indian cuisine and when their Kebab making skills were fused with the spices of India to give super delicious and scrumptious dishes. This dish now is very popular in Hyderabad and is very prodly an addition to the Nizam cuisine, which of course is greatly influenced from the Mughals.

Tangdi Kebab are everyone’s favorite. Tandoori kebabs are pretty popular amongst people and mostly when we think of Tangdi kebab, the first kebabs that come to mind are the red tandoori kebabs.

With the huge variety that Chicken offers in the “World of Kebabs”, these happen to be one of the easy ones and definitely something beginners can easily cook to impress. The kebabs need marination time, overnight is not needed, 3 hours are enough. If you are running out of time, marinate and wrap them up with cellophane or a tight lid and leave them in the freezer for 15 – 30 minutes. Not any longer or the chicken pieces would freeze.

The chicken can be cooked in the oven as well, but going through the traditional way for cooking Kalmi Kebab, I decided to pan fry them. With pan frying, the besan cooks properly adding crunch to the chicken, which otherwise in the oven to take longer. Again, you might prefer the oven and if you do, its 350F/180C for 20 minutes each side.

As I said before, the dish is great for beginners and super easy to make. If you are a great cook, this dish makes an excellent side dish to your party and the flavors show great efforts. Hope you enjoy making it as much as I did.

Burrito Bowl

When you live in a country far away from home, you tend to dry more of different cuisines in order to blend in. Ohh yes! You read that right. We as Indians try our level best to try and blend in sending our wonderful taste buds on a toss. See, believe it or not, Indian cuisine is one of the most wonderful cuisines you can come across. So many varieties of food offered by one country where the food palette from one state to another differs as much as countries in Europe.

Now, I don’t mean to look down upon other cuisines but I do feel very proud of my ethnicity. Having tried so many different spices, oils, vegetables is an experience of its own. So, coming back to living in America, we tend to please people around us and not or taste buds. Indian food with spices is actually a very healthy option for guilt free food. Leaving that we indulge in butter and cheese based cuisines coz that satisfies the masses and we want to be one of those. But for those of us, who yearn for meals with similar taste, Italian and Mexican food come the closest.

Being a Muslim and eating only halal, our best bet for food is either vegetarian or seafood. Also, not trying food made by people who do not stick to the rules of a cuisine and make it in a fusion way is not my cup of tea. So, people like me, who want try that authentic Mexican chicken rice bowl from their favorite Mexican restaurant, eat fish and try to cook same flavors with chicken at home. I tried my level best to stick to Mexican flavors to get the authentic taste. Hope you enjoy it as much as I did.

Burrah Kebab

My dad took a lot of trips to Delhi for work. Even we as a family, would be visiting the capital of India quiet often since back in the 80’s and 90’s, we didn’t have the concept of direct trains from one city to another. So, we would take a train to Delhi and then another one to the destination. Since, My maternal family lived in U.K., dropping someone off to Delhi or picking them up from Delhi or we visiting our maternal home was always a trip through Delhi.

Now, being a non vegetarian, purani delhi is the place to be. Despite the crowd, the pollution and uncountable hygiene issues, every non veg lover at some point visited “jama masjid area” to satisfy their cravings. We did that on almost every trip and my father tried it at least twice each time, if not more. Some very popular restaurants serve awesome and delicious kebabs and curries with sheermaal, roomali roti and finger licking biryani.

Amongst the various variety of kebabs, Burrah kebabs stole my heart. Made from lamb marinated for a few hours, these kebabs are juicy, crunchy and full of beautiful flavors. So I had to search for the recipe. Though the recipe that I found wasn’t close to what my taste buds witnessed as a kid but being a home chef I knew how to add and deduct things and come out with the exact taste.

This is a must try for people who love lamb kebabs. Pretty easy to make and can be stored too.

Thalassery Chicken Biryani

This recipe is from the land of Kerala. Thalassery food has a distinct  flavor. Thalassery town of Northern Kerala, that has a blend in Arabian, Persian, Indian and European styles of cooking as a result of its long history as a maritime trading post. Thalassery is very popular for its delicious Biryani. Unlike other biryani dishes, Thalassery Biryani, originally uses jeerakshala/kaima rice instead of the usual long grained Basmati Rice. I used Basmati Rice since I cannot see my Biryani any other way. My Mother in law still prefers the kaima rice over Basmati rice, even for Biryani. Kaima rice has its own exclusive flavor and they have a wonderful fragrance as well, but I just come from a very Mughlia thought and prefer my Rice grain to be beautifully long

The influence of Arabian/Mughal culture is evident, especially in the dishes of the Muslim community of Kerala and Thalassery Biryani happens to be one of those dishes that shows it Mughlia flavors and is still enjoyed by all.

We, personally as a family love the food made in Kerala, vegetarian and Non vegetarian. You will find us taking time out if any of the hotels are celebrating “Kerala food festival week” during our stay in India. The best thing I enjoy about Kerala cuisine is the fact that the flavor of each ingredient comes out distinct in its own way making the dish complete. The way the cuisine has its ingredients listed and the process in which you add the spice changes the flavor of a dish. With Kerala cuisine , they make sure that no one ingredient over powers the flavor of the other ingredient. In fact, they blend in symphony making the dish delicious and exclusive.

Chatpata Murgh Tangdi Kebab

A unique recipe from Old Delhi, Purani Dilli ki Jama Masjid ki galiyaan. I have literally known that area almost by heart. Okay, may be not the whole area, but definitely the famous restaurants, Kareem and Jawahar happen to be my father’s favorite. I remember as a young child looking forward to going to Jama Masjid just for the food and how much I wished those days that we should have lived in Delhi. My idea of living in Delhi soon changed as I got older thanks to the heavy traffic, but my taste buds still crave the lovely food. I think that might be the only reason most of my Kebabs are inspired by the flavors i experienced as a kid.

It’s one of the kebabs made specially during Ramadan. As much as Jama Masjid is popular for its non vegetarian cuisines, but some dishes are exclusively for this special month. This dish happens to be one of those special ones. The marinade is easy to do and it adds a lot of flavor to the chicken legs. The best part about the marinade is that it leaves the Kebab moist from inside with a crunchy exterior. I cooked these in the oven, but you can always barbecue them or even cook them on a pan. An oven though is always preferred. The second best thing after an oven would be a Gas Tandoor.

I would recommend you to marinate the kebabs for at least 3 hours, but if you happen to be in a rush, an hour in the refrigerator would also be fine. The result might not be as amazing, but still good.

This Kebab chatpata as the name suggests and makes a wonderful side dish to your regular dishes and will also amaze your guests.

Rajasthani Malai Biryani

A recipe close to my heart. Rajasthan is my home state. The land of Marwar is popular for its beautiful and sweet spoken people along with the gorgeous forts and palaces. Its also known for its beautiful colors that can be easily seen in the attires and things people use. We proudly call it our “Rangeelo Rajasthan”.

Rajasthan is mostly popular for its vegetarian food but little do people know that Non vegetarian food of Rajasthan is not only very popular between Non vegetarians but also portrays the love for cooking from the Royal Palaces. Most kings in Rajasthan have loved to cook in their leisure time and they enjoy cooking the traditional Marwar recipes that have passed on to us from generations.

Rajasthani Malai Biryani comes in from the kitchens of the Mughals and clearly shows the bond of brotherhood and relationship shared by Rajputs and Mughals. When Princess Jodha married the Great Mughal Emperor Akbar, the Mughal cuisine was all set to merge like the traditions and fesivals of the two different faiths. This dish uses a lot of chili. Well, that’s what Rajasthan is popular for, but to calm it down it uses cream or malai. Mughals used a lot of cream and dry fruits in the cuisine and most dishes that use a lot of cream or saffron are actually a gift from the Mughal Era. In fact, its surprising how many dishes in Persia or Arab countries sound and look similar to Indian/pakistani cuisine and it clearly shows how the foods welcomed the merge and till today we enjoy and take pride of what our history gifted us.

Lucknowi Mutton Biryani

Lucknow food is food of the Nawabs and I love the Kebabs, curries and of course, the Biryani. Lucknowi Biryani uses a lot whole masalas and requires the chicken to be marinated in whole spices, powdered spices and Yogurt.

I have been to Lucknow once, with my parents in 2002. Though we didn’t stay for too long, but few days were enough for me to love the flavors and food from Lucknow. I wasn’t a complete cook back then and as much as I loved the food, I wasn’t so keen about doing a research to find out or look for recipes and try them out. Its much later, few years ago when I decided to get on the band wagon of cooking varieties of Biryani and started my journey of getting minute details about everything, is when I discovered the details about the Lucknowi Nawabi Cuisine.

This particular recipe happens to be one of the most old and original recipes from the Khansamas of the Nawabs. There were a few books in Urdu that described the times of Nawabi culture and traditions and how posh the era of Nawabs were and how beautifully and exclusively served food and how delectable the food used to be. The article gave an idea of how the Khansamas marinated the meat/ chicken and the ingredients they used and following the notes, I came up with the recipe as close to the original.

I have also tried making Lucknowi seekh and Galouti kebab and if you check the Kebab section, you will find the recipes for them. This Biryani doesn’t use tomatoes, but uses a lot of coriander leaves, mint leaves and green chilies.

This Biryani is one of my family’s favorite.  This was my first dish from Lucknow and from there on, its been pretty regular in our house. This is a wonderful recipe. Like I say for most recipes, Please read the complete recipe properly before you try this out. Its a sure hit.
