Garlic Lemon Butter Tilapia with Shrimp

Seafood has amazing recipes. I usually don’t enjoy baked fish, as I feel baking tends to make the fish dry but this recipe for baked fish is just outstanding. This recipe doesn’t require any mayonnaise, or cheese, or any kind of flour or bread crumbs. All you need is butter, lemon, garlic, a few spices, and salt. This Fish by itself is also Keto friendly. I paired the fish with baby potatoes, asparagus, and mushrooms. I also cooked the Fish and shrimp with bell pepper and jalapenos. But the choice of vegetables is always a personal choice. You can always substitute the vegetables you like. This dish is super simple, low carb, gluten-free, and amazingly delicious.

What kind of Tilapia is good?

If you have a store that sells fresh and clan fish, there can be nothing better. That kind of seafood is the best in quality. But mostly, the fish that I buy, especially Tilapia is frozen which is good too. There is always a possibility that any fish you buy has been frozen at some point in order to keep it fresh for transport.

Frozen fish sometimes are better than the Fish that appear fresh but you don’t see them live. Frozen fish is said to be freezer right after the catch, therefore feel absolutely sure to use the fish that is frozen since it is just as good to use as a live fish, and in most cases better than fish from the counter.

Tilapia is generally best and healthy if it’s wild-caught which is the case with most seafood. Farm-raised fish is also considered very healthy. Tilapia is a great source of protein. Though if you are buying farm-raised fish, make sure you check the reputation of the farm and the kind of feed they use for their fish.

I used Shrimp for some extra flavor which I feel goes fabulously with Tilapia. Baked or grilled veggies are a great source of fiber and fill you up too. This dish is great for kids too. The dish is filling, healthy, and low in carbs. Enjoy!!!

Korean Chicken Bites

Asian food has so much variety. Chinese, Japanese, Indonesian, Thai, Malaysian, and Korean…. all different from each other yet so alike. We have tried all of them but just with seafood. I know it gets difficult to be a Muslim and practice the basics of eating only halal food. I have friends who seem to be comfortable with consuming non-halal Chicken and meat as well, but not us. I feel that when there are ways and options for us to follow these basics then we should.

Well, that doesn’t stop us from trying things we would love to. I believe that’s the best part about having strong taste buds and enjoy cooking. So, here I am with another mouthwatering recipe of a similar dish that I tried with scallops and loved them. I modified the recipe slightly. The scallops that I tried were not marinated or batter-fried, which to me was a little bland and all the flavor only came in through the sauce. The sauce was nice, not too spicy, just with a little kick. So, when I decided to make something similar using Chicken, I decided to add a little crunch and flavor. I, therefore, marinated the chicken, since Chicken has no flavor by itself and absorbs the flavors you add so adding little spice to Chicken is always mandatory. Even if you are adding chicken to noodles, always cook it with a little salt if nothing else.

This Chicken marination is with Buttermilk, chili flakes, onion powder, garlic powder, black pepper powder, white pepper powder, oregano, and salt. Leave it to marinate for at least an hour if not longer. Further roll the Chicken pieces in a mix of flour, salt, and corn starch powder and fry them. The sauce has crushed Garlic and Ginger, soya sauce, sesame oil, gochujang sauce [a sweet and spicy Korean sauce available easily in all Asian food markets], Honey, Brown sugar, vegetable oil, and Red chili flakes. I used scallions and sesame seeds for garnishing, but you can always add them to the sauce. I feel the scallions lose their crunch if mixed in the sauce.

Substitute for Buttermilk?

Take equal quantity of milk as of the Buttermilk required and add 1 tbsp of lemon juice to it. Mix well and add chicken to it.

The flavor of this Chicken is sweet and spicy which makes it an excellent choice for all taste buds of all ages unless someone cannot tolerate any spice at all. I find them a great choice for playdates and small get-together parties.

Cooking in advance

You can fry the chicken bites and keep them in the oven too. The oven needs to be preheated. Keep it on warm or at 200F. Anything above it would overcook the chicken making it chewy or burning it.

Chicken Veggies oven special

But, the problem that people like me face is that we also need something that tastes scrumptious and good along with all the health benefits.

Specially, if you have children as demanding as mine, you basically fight a battle. When the demand is to make veggies look more appealing and to make their protein go leaner without them noticing. That’s when dishes like this are invented.

This Chicken is marinated with spices making it flavorful. The spices can always be switched or played around with. I added Tandoori powder and Red chili powder to make the flavors a little more spicy, but you can always reduce the quantity or omit the spices altogether. I find this a great recipe for easy lunch and dinner.

Chicken Broccoli and Rice

But, the problem that people like me face is that we also need something that tastes scrumptious and good along with all the health benefits.

Specially, if you have children as demanding as mine, you basically fight a battle. When the demand is to make veggies look more appealing and to make their protein go leaner without them noticing. That’s when dishes like this are invented.

Eating Green or eating more greens is always good and if you manage to make recipes that makes your kids consume more greens. This Chicken cooked with Broccoli is one such recipe. I serve it with boiled white Rice, but you can always serve it with Brown Rice, Quinoa or even Barley.

I like to mix and match veggies and I feel Broccoli, onions go really well with Chicken. Add little Olive oil to a pan, followed by chopped Garlic. Once the garlic changes color, add the boneless pieces of Chicken followed by chopped onions. Further season with Red chili flakes, Black pepper powder, Garlic powder, Onion powder, salt, cumin powder and paprika. Once the Chicken is cooked, add the chopped Broccoli and stir fry for 5-7 minutes and its ready to serve. Serve with cucumbers and Avocado on the side and boiled Rice. You can always choose to serve it with any other grain of your choice.

My purpose for introducing these meals on my website is to just make more people aware of the fact that eating healthy does not mean eating tasteless. You can always incorporate more vegetables in your diet with excellent flavors. I hope you enjoy this quick meal which is not only nutritious but also filling and delcious.

Chicken Veggie Wrap

Now this isn’t your regular Chicken veggie wrap. Its a little different. The wrap that I have used is not a Tortilla, though you can always use a home made/ store bought Tortilla. The Chicken I used is boneless thigh meat, but you can also use Chicken breast. I cooked it with little Olive oil, Garlic powder, Onion powder, Red chili flakes and white pepper powder with Vinegar. Once the Chicken was cooked, add Bell peppers and Onions. Further, just add hot sauce to add a little zing. Wrap everything in lettuce leaves with some onions and chilies/jalapenos and further in a roti or whole wheat tortilla with some garlic Mayo sauce and enjoy the scrumptious bites of goodness and health.

Cod Fish with Roasted Veggies

We love all kinds of Sea Food. Curries, Fried, Grilled, any which way we love them. This dish makes a great option if you are on a diet, or looking for low carb options or following keto recipes. This is a quick recipe for lunch and a super nutritious one too.

I used Frozen cod but if you have fresh Cod available, that would be great. My boys love fish and grilled veggies or just cold salads on the side of a pan fried fish. These kind of dishes are easy, scrumptious, fits the budget, healthy and delicious. This is a perfect recipe when you are running short on time.

I use basic spices like Red chili flakes, Garlic powder, Onion powder, White pepper powder and Tandoori masala. I also added some dry parsley for flavor. You can always mix and match and use the spices you like. I personally don’t like much of cinnamon or Red chili powder on cod fish. I also feel that Black pepper makes it a little bitter so I prefer white pepper powder. Add a little Lemon juice and the marination is just perfect.

I grill or saute the bell peppers and Asparagus in the same pan as the fish once i am done cooking the fish. I feel it adds a lot of flavor from the fish and the spices to the vegetables. This is a great dish if you want to involve your budding teenagers and teach them easy and quick dishes.

Chicken Quesadilla

These are delicious wraps with spicy pan fried chicken and cheese that come together in under 30-40 minutes. This is something that will make your children ask for more. They are easy to make and can also be made partly ahead of time. These little scrumptious bites are something you will fall in love with.

For Chicken, you can use Rotisserie chicken or any chicken that’s left over, or any grilled chicken or even chicken kebabs. I cooked my chicken in a tex mex style. I cooked the chicken with some onions and green chilies and added Paprika, cumin powder, chili flakes, cumin powder, Garlic powder, Onion powder and Dry parsley. I also added little Apple cider vinegar and hot sauce to spike it up a little. Just cook everything till the chicken dries up and the sauce coats the chicken completely.

The quesadilla can always be made from store bought Tortilla. I made mine at home with All purpose flour and Corn flour. They are pretty easy to make as long as you have a Tortilla maker. Once you make the Tortilla, add some cooked chicken and cheese, fold them up and place them in the oven for 10 minutes.

The quesadillas can be cut into two to make them look nicer while serving. These quesadillas are scrumptious, filling, easy to make and scrumptious.

Shrimp Hero Baguette Sandwich

This recipe is a true inspiration from one of our favorite restaurants near our old home. This restaurant is pretty old, owned by a lovely Italian family and has been serving New York style pizza for almost 80 years if not more. A very small restaurant that can barely seat 12 people, but most people order their take outs. We were their regular customers and along with the Pizza, they also served variety of other Italian fast food cuisines. What I loved the most was the Garlic knots and the Shrimp Hero Sandwich. The sandwich was super huge and loaded with wonderful sauce and lots of cheese. The ingredients always tasted so fresh and awesome.

I kind of always love going to these small eateries because one can vouch that they cook fresh because they do run out of things and say “no” too which never happens with big chains. Although, big chains always maintain quality but use large amount of preservatives that keep the food looking good and taste great. Anyways, getting back to my favorite Shrimp sandwich. We moved and its just not possible to go back and forth to that restaurant. So, once I started making my own bread, I also started making baguettes and that led to making these wonderful sandwiches.

My boys love eating bread. Specially if the bread is served straight out of the oven. Baguette, the long delicious French Bread seems to be a family favorite. Every restaurant that served a good bread had us visiting them more often. Every time we bought French Baguette from our favorite baker, I would reheat it in the oven to make it taste fresh, which was great but not the same. And, that’s when I thought I should try making my own baguette at home. Honestly, looking at so many different recipes, I felt that Baguette wasn’t all that fancily difficult and I decided it was time I just make it. I mean, how could anything be better than a freshly baked loaf of bread? That crackly crust, the tender, airy crumb inside, steamy and yeasty and just begging to be torn into.

You can look into my baguette recipe and follow it. It’s a detailed recipe and the instructions are pretty easy to follow and execute. Once your baguette are cool enough to handle, cut them to sandwich size and slit from the middle. To prepare the shrimp, just devein and take the tail off, wash them well too. Fry some garlic in the oil and add marinara sauce. Once it comes to a boil, add shrimps to it. Cook for 2-3 minutes, add Red chili flakes, dry parsley and garlic powder. Cook for a minute and add Onion powder. Cover and cook for 2 minutes. Your marinara sauce should be thick by now and shrimp should also be cooked. Slit the baguette and add the shrimp with sauce. I like mine spicy, so I added Jalapenos as well, but you don’t have to. Place them in the oven at 350F for 5-7 minutes. Sprinkle some dry parmesan cheese and serve.

Haala’s Fish Burger

We love Fish in all kind of different ways. We love it grilled, curry, fried, steamed, baked. Any which way, we love it. Since we cannot eat non halal food outside, it refrains us from eating Chicken or meat burgers outside and I ended up making my own in different styles. Yes! I make around 4-5 different kinds of Chicken and meat burgers at home. Now, you know even if you know how to cook 1000 different kinds of meals, you kids would still want something more and you have to super creative at times to satisfy those little minds.

So, after completing my creative journey on satisfying the “not so little” tummies with my chicken and meat burgers, the demand came on to Fish Burgers. My first question was that why would I make something that we can easily eat outside to which the reply was an explanation…simple one and harsh too… It’s a time to stay at home and we aren’t going out to eat either. And, of course that was enough to convince me into making Fish Burgers.

I used Tilapia Fish fillets. You can use any other fish fillet of your choice. Going for a fish which does not have a very overpowering flavor is always better when you marinate and roll it in flour. I personally feel that any fish like Salmon or Kingfish will only taste nice in a burger if you spice them up and fry them without rolling them in flour. It’s my personal outlook and you can always choose to differ. I mixed in the spices with the fillet, rolled them in a mix of flour and corn starch powder. Later pan fried them. Once cooked and crunchy from both sides. Spread some butter on both half of the butter and just heat them a little on a pan. Toasting the burger is optional, so you can always omit this step. You can also grill place them in between burger buns with Onion, Tomato, Lettuce, garlic mayo sauce and Hot sauce. Sprinkle some dry parmesan cheese powder.

These burgers don’t take too much time and very satisfying as well. You can also serve the fish fillet with the veggie only without the burger as a fish salad.

Hot Chicken Sandwich

We all love sandwiches, specially hot/warm sandwiches if well made just make your taste buds dance and enjoy every bite. There are so many varieties that I make and my boys still never seem to have enough. I sometimes feel that they look at me and see a food invention machine because I work according to their wants and cravings and sometimes, invent something by mixing up 2-3 of their favorite flavors which makes up a new dish and is loved by all.

This Sandwich seems to be one of those. My boys are big fans of hot and saucy Chicken wings. Once when our nearest Halal grocery store was out of Chicken wings and my boys were craving them, I made Boneless chicken and mixed them up with Hot and spicy chicken wing sauce and they loved it. It was like an added variety which was created in a fluke. Not just the chicken wings and the boneless hot chicken stripes became popular in my house, even their friends started making requests to make them for play dates and I did.

After few weeks, and making multiple different sandwiches, I came up with the idea of hot chicken sandwich. Not sure how my critics [my husband and kids] would react, I made it without a discussion of what they would think of the combination. Trust me, this will just blow your mind and the people you make it for will not stop praising for serving them with something so wonderfully delicious.

The recipe is pretty simple to what it turns out to be. I am pretty sure if you ask someone to guess the recipe after the first bite, they will assume it to be something difficult, but honestly it’s pretty simple and easy to make and if you just follow the recipe steps as elaborated you will not just be able to serve a great sandwich, but also your chicken will have a super crunchy and crispy exterior and the inside will be juicy and flavorful.

So, basically to start with I cut the boneless chicken to thin long strips. I then marinate the chicken in egg, milk, lemon juice and spices for around an hour. You can definitely do it longer if you wish. Usually 30 minutes is fine too. Make sure the chicken is completely soaked in. After that the chicken has to be rolled in a mixture of flour, spice and crushed cornflakes. We then deep fry the chicken pieces. The sauce is made using hot sauce and butter. I also used extra red hot chili powder, which you can always omit if you do not prefer your hot chicken less spicy. Add the chicken pieces to the sauce and then add them to the long Italian bread along with sliced onions, garlic mayo sauce and shredded cheese. Let them bake in the oven at 350F for 8-10 minutes. Serve hot/warm. Enjoy!!!
