Korean Chicken Bites

Asian food has so much variety. Chinese, Japanese, Indonesian, Thai, Malaysian, and Korean…. all different from each other yet so alike. We have tried all of them but just with seafood. I know it gets difficult to be a Muslim and practice the basics of eating only halal food. I have friends who seem to be comfortable with consuming non-halal Chicken and meat as well, but not us. I feel that when there are ways and options for us to follow these basics then we should.

Well, that doesn’t stop us from trying things we would love to. I believe that’s the best part about having strong taste buds and enjoy cooking. So, here I am with another mouthwatering recipe of a similar dish that I tried with scallops and loved them. I modified the recipe slightly. The scallops that I tried were not marinated or batter-fried, which to me was a little bland and all the flavor only came in through the sauce. The sauce was nice, not too spicy, just with a little kick. So, when I decided to make something similar using Chicken, I decided to add a little crunch and flavor. I, therefore, marinated the chicken, since Chicken has no flavor by itself and absorbs the flavors you add so adding little spice to Chicken is always mandatory. Even if you are adding chicken to noodles, always cook it with a little salt if nothing else.

This Chicken marination is with Buttermilk, chili flakes, onion powder, garlic powder, black pepper powder, white pepper powder, oregano, and salt. Leave it to marinate for at least an hour if not longer. Further roll the Chicken pieces in a mix of flour, salt, and corn starch powder and fry them. The sauce has crushed Garlic and Ginger, soya sauce, sesame oil, gochujang sauce [a sweet and spicy Korean sauce available easily in all Asian food markets], Honey, Brown sugar, vegetable oil, and Red chili flakes. I used scallions and sesame seeds for garnishing, but you can always add them to the sauce. I feel the scallions lose their crunch if mixed in the sauce.

Substitute for Buttermilk?

Take equal quantity of milk as of the Buttermilk required and add 1 tbsp of lemon juice to it. Mix well and add chicken to it.

The flavor of this Chicken is sweet and spicy which makes it an excellent choice for all taste buds of all ages unless someone cannot tolerate any spice at all. I find them a great choice for playdates and small get-together parties.

Cooking in advance

You can fry the chicken bites and keep them in the oven too. The oven needs to be preheated. Keep it on warm or at 200F. Anything above it would overcook the chicken making it chewy or burning it.

Chicken ke Sholay

With wide variety of Chicken Kebabs that we try every now and then, some cooked at home and some eaten at restaurants. This Kebab dish is from one of our favorite restaurants, which has quiet a few branches around New Jersey and a few neighboring states. This Kebab was always a family favorite and a dish we regularly ordered.

And then for some reason the restaurant nearest to our house shut down. Now, for people who live or have been to United states know that nothing is “close”, but when we think 5 miles, we mean its close. So, we basically didn’t have any of the restaurant branch anywhere close which definitely makes us sad, but there is always an option to try and make what we like. I feel this is sometimes a test just to prove ourselves our caliber.

So, I got down to trying out making these awesome bites of goodness. It did take a few trials but I think the perks of being in love with your food and being able to play with your spices makes you enjoy cooking food that satisfies your taste buds. The hard part is to just try and get the correct amount of spices to make a dish taste exactly like how we have eaten. The best part is that these experiments make get some wonderful dishes to your dining table which are always a delight and loved.

Haala’s Fish Burger

We love Fish in all kind of different ways. We love it grilled, curry, fried, steamed, baked. Any which way, we love it. Since we cannot eat non halal food outside, it refrains us from eating Chicken or meat burgers outside and I ended up making my own in different styles. Yes! I make around 4-5 different kinds of Chicken and meat burgers at home. Now, you know even if you know how to cook 1000 different kinds of meals, you kids would still want something more and you have to super creative at times to satisfy those little minds.

So, after completing my creative journey on satisfying the “not so little” tummies with my chicken and meat burgers, the demand came on to Fish Burgers. My first question was that why would I make something that we can easily eat outside to which the reply was an explanation…simple one and harsh too… It’s a time to stay at home and we aren’t going out to eat either. And, of course that was enough to convince me into making Fish Burgers.

I used Tilapia Fish fillets. You can use any other fish fillet of your choice. Going for a fish which does not have a very overpowering flavor is always better when you marinate and roll it in flour. I personally feel that any fish like Salmon or Kingfish will only taste nice in a burger if you spice them up and fry them without rolling them in flour. It’s my personal outlook and you can always choose to differ. I mixed in the spices with the fillet, rolled them in a mix of flour and corn starch powder. Later pan fried them. Once cooked and crunchy from both sides. Spread some butter on both half of the butter and just heat them a little on a pan. Toasting the burger is optional, so you can always omit this step. You can also grill place them in between burger buns with Onion, Tomato, Lettuce, garlic mayo sauce and Hot sauce. Sprinkle some dry parmesan cheese powder.

These burgers don’t take too much time and very satisfying as well. You can also serve the fish fillet with the veggie only without the burger as a fish salad.

Hot Chicken Sandwich

We all love sandwiches, specially hot/warm sandwiches if well made just make your taste buds dance and enjoy every bite. There are so many varieties that I make and my boys still never seem to have enough. I sometimes feel that they look at me and see a food invention machine because I work according to their wants and cravings and sometimes, invent something by mixing up 2-3 of their favorite flavors which makes up a new dish and is loved by all.

This Sandwich seems to be one of those. My boys are big fans of hot and saucy Chicken wings. Once when our nearest Halal grocery store was out of Chicken wings and my boys were craving them, I made Boneless chicken and mixed them up with Hot and spicy chicken wing sauce and they loved it. It was like an added variety which was created in a fluke. Not just the chicken wings and the boneless hot chicken stripes became popular in my house, even their friends started making requests to make them for play dates and I did.

After few weeks, and making multiple different sandwiches, I came up with the idea of hot chicken sandwich. Not sure how my critics [my husband and kids] would react, I made it without a discussion of what they would think of the combination. Trust me, this will just blow your mind and the people you make it for will not stop praising for serving them with something so wonderfully delicious.

The recipe is pretty simple to what it turns out to be. I am pretty sure if you ask someone to guess the recipe after the first bite, they will assume it to be something difficult, but honestly it’s pretty simple and easy to make and if you just follow the recipe steps as elaborated you will not just be able to serve a great sandwich, but also your chicken will have a super crunchy and crispy exterior and the inside will be juicy and flavorful.

So, basically to start with I cut the boneless chicken to thin long strips. I then marinate the chicken in egg, milk, lemon juice and spices for around an hour. You can definitely do it longer if you wish. Usually 30 minutes is fine too. Make sure the chicken is completely soaked in. After that the chicken has to be rolled in a mixture of flour, spice and crushed cornflakes. We then deep fry the chicken pieces. The sauce is made using hot sauce and butter. I also used extra red hot chili powder, which you can always omit if you do not prefer your hot chicken less spicy. Add the chicken pieces to the sauce and then add them to the long Italian bread along with sliced onions, garlic mayo sauce and shredded cheese. Let them bake in the oven at 350F for 8-10 minutes. Serve hot/warm. Enjoy!!!

Haala’s Zingers

My boys prefer home lunches and also love varieties for their lunch. When I use the word variety, I mean that they would not want a dish to be repeated in 2-3 weeks and believe it or not, its a lot of pressure to make something that tastes great and that they would love it as well.

These chicken burgers are a very close copy to a famous food chain. These are easy to make and can be easily made by beginners as well. The chicken does not have to marinated for too long and even the process of marination is with pretty simple ingredients. This is great dish if you have boneless chicken available and haven’t thought of anything in mind, and need to get things ready in a rush.

My boys love these zingers and believe these are one of my best creations. Since its not possible for us consume Chicken outside in USA, trying to come up with our own is the only option. But, since India has a halal option for almost all food joints, we have tried the burger and my kids actually told me that this tasted way better [I know, I am raising them well to please their mother]. But, I like the fact, that its fresh, homemade and you know what you are putting in your child’s plate. You might be able to air fry the burger. Though I have an air fryer, I always feel that it makes food extremely chewy. And then again, when you are cooking at home, ingredients are more fresh, no preservatives are added so, cooking things the way they should be cooked makes kids happy too. I am against messing up food giving it the label of being healthy. You don’t want your kids to go off basic food. You just teach them to make healthier choices and eat well.

I usually make this and serve it with a different spicy sauce . The recipe for the spicy sauce is in the sauce section. A blend of mayo, ketchup, hot sauce and mustard sauce goes perfectly with this spicy zinger chicken burger to give that kick to this sandwich.

Tughlaqi Chicken Kebab

Tughlaq Dynasty was a Muslim dynasty of Turkish-Indian origin which ruled over the Delhi sultanate in medieval India. Its reign started in 1320 in Delhi when Ghazi Malik assumed the throne under the title of Ghiyath al-Din Tughluq. Though Tughlaqs weren’t anywhere like Mughals who built numerous monuments in India and mingled and married princesses and came to India with a vision of settling down, but they weren’t too different either. Mohammed bin Tughlaq is the most famous ruler amongst all the rulers of that family and the dynasty expanded its territorial reach during his reign with the help of military campaign. As much as a lot of people while reading Indian history don’t appreciate these Persian or Turkish rulers entering the Indian territories, the fact that we fail to understand is, that it was a norm back then, just like today it is for each nation to compete and show their might by showcasing their missile or nuclear power. I enjoy reading history and love to read about how different kings ruled over their kingdoms, the culture, their traditions and specially their foods.

When the Tughlaq dynasty reigned, the Persians were still getting accustomed to the spice India offered and as much we take spice marinades and cooking like a walk in the park today, since our food palettes know the taste that each spice would give out to a dish, it wasn’t that easy when the blending took place in those old kitchens. Its easier to experiment with flavors now except if you go all out experimenting with something totally new. Getting back to this recipe, the name to this dish comes from someone who loves coming up with awesome names. After the name I started reading history about the Kitchen during the era of Mohammed Bin Tughlaq and discovered though the name came in a fluke but I did discover that this kind of recipes made it to the initial Turkish-Indo recipes. This recipe has a blend of both sides. The hint of Indian spices, the use of Ginger and Garlic which is inspired from Turk-Persian rulers, the idea of marinating chicken before cooking and of course frying them till crunchy. So, with all that I stick to the name and believe the name is apt.

This recipe has a mix of spices with flour and corn starch powder, fried with curry leaves served with my Garlic mayo sauce and some sliced Onions. Its a quick, easy and delicious recipe. Enjoy!!!

Mango Kulfi

Kulfi or Qulfi is an indian word derived from the persin word “Qufli” which means covered cup. The dessert was likely originated during the Mughlia Reign in the 16th century. The Mughal Khansamas or cooks were already popular with their mastered skills of creating sweet dishes with dense evaporated milk.

Kulfi is traditionally prepared by evaporating sweetened milk. The key is constant stirring and slow cooking. The milk has to be reduced, thickened and later add your favorite flavors. The best thing about kulfi is that once the milk is thickened, it accepts all flavors , be it fruits, dry fruits or even just plain essence. Reduced milk is very accepting when it comes to other flavors and the blend is delicious. The thing that most people don’t understand is a basic rule of constant stirring to keep milk from sticking to the bottom of the vessel where it might burn, until its volume is reduced by a half, thus thickening it, increasing its fat, protein, and lactose density. The semi-condensed mix is then frozen in tight sealed moulds and put in the freezer.

Desserts are every family’s favorite and Kulfi for us seems to top the chart during summer. My homemade kulfi is always loved by my family and friends. After trying different types of Kulfi using a variety of dry fruits, I decided to venture out using fruits. One of the first fruits I experimented with was Lychee and though the end product wasn’t a disaster, the Kulfi never came through.

I believe after that failed experiment that fruits for Kulfi should always be fresh. The Lychee I used was canned, but this time when I tried the delicious Mango Kulfi, I wanted to make sure nothing goes wrong and we get to enjoy the most loved fruit combined with the most loved dessert.

And that’s when I thought of making Mango Kulfi. Although I would have loved to make this delicious treat with Hapus Mango, but unfortunately Hapus isn’t available here like India, so I had to bear with the best ones we get here and so I did. Remembering Hapus, I was actually challenged by someone recently claiming that with the confusion I have with Mangoes, I surely have never tried Hapus. Honestly, I am one of the weird ones who isn’t a big fan of Mangoes and as much as people find it insanely funny, its a fact that I can look at a wonderful and beautiful mango and walk away. So, I will definitely share my hapus story another day but for for now, Please enjoy this wonderful and beautiful recipe.

Chhole Tikki Chaat

I belong to Rajasthan, the land of flowing ghee, beautiful people and the most colorful state of India. Marwaris love chaats, specially the ones that are fried and warm and trust me, no one can make chaats and sweets better than Marwaris. That’s the reason we always see most sweet vendors and chatwalas as Marwaris.

I have been a big fan of chaats and this happens to be one of my favorites. It takes a little time to make it, but one bite into this awesomely delicious food and all the effort seems totally worth it. This chaat is also close to my heart because this was the first dish that portrayed my culinary skills and he felt proud that he is getting married to a promising cook.

Now, I learnt to make this chaat through a family friend, who would offer to cook food for us every Ramadan. Honestly, that was the first time I realized that such good street food can also be cooked at home as well. I was 11 then, and I would always be a little helper. With time, I learnt how to make it by myself and it always has pleased everyone who tried it.

The tikkis are made with boiled potatoes mixed with spices and rolled in mix of Maida and Corn Starch Powder, before pan frying. The corn starch makes the tikkis super crunchy and that is exactly how you want them to be. Specially once you add on hot chhole, the tikkis can get soggy very quickly. Corn starch helps it stay crunchier for longer.

The chhole have to be spicy and tangy, giving that perfect chaat taste to the tikki chhole. Adding Tamarind and dry pomegranate powder to chhole makes it taste just like the street foods in India. I usually soak my chickepeas, boil them and once cooled down, I pack them in separate ziploc bags and freeze them. I like to make loads of chaats that include chickpeas and this is one of my favorites. So, not having chickpeas, since they need to be soaked overnight, is the last thing I need to worry about if I feel like making chaat.

Assembling this chaat is what makes it taste more delicious. You can make the best Tikkis and chhole, but if you don’t assemble the chaat the right way, it wouldn’t give you flavors you are looking for. It has to be served warm on top of potato tikki and further garnished with chopped onions, coriander leaves, Tamarind date chutney, Green chutney and thin sev.

Madrasi Fish Fry

This was a recipe that I got from the internet or may be some book. Honestly, its hard to recall. Newly married, I was in USA and taking up my new role of being a homemaker, all set to impress my better half with my cooking skills. Those days I would try any recipe I would come across and honestly I couldn’t make out what he would like. I was still new to his choice of flavors and he was also getting accustomed to my style of cooking. So, there were always some great experiments and many failed ones too.

So, I would always search for recipes and honestly, its been 15 years and those days when I saw a good recipe I would note it down in my recipe book [yeah, I know I am old school]. I am still pretty old school making my grocery list on a paper, but that’s how I like it.

Coming back to this recipe. I was pretty new to fish marination. I knew little but I was not really of the level where I could make a decision looking at a recipe and tell what it would taste like, though now things have completely changed, trust me loads of practice and patience, less of me and more of my husband. He would always praise my good trials and encourage me when things go wrong.

This fish has a marination of spices, Ginger, garlic and tamarind. Marinating the fish lets the fish soak up the spice, so you should try and marinate the fish for at least 1-2 hours. Further, you roll the fish piece in Rice flour and corn starch mix and pan fry them. The Rice flour and corn starch helps the exterior a lot of crunch. This fish goes great for Tea parties and as a side dish with Rice and Daal.

Chicken Hero Sandwich

This sandwich is a popular Italian-American fast food. Its not one of those signature Italian dishes like a bowl of pasta, but more of the Americanized Italian dish, which is basically a combination of fried chicken with spiced up marinara sauce, cheesed up between a Hot dog bun or sliced baguette. Adding a few sliced onions is always great, but its a personal preference.

Now, we cannot eat chicken outside and every time I went for a Hero Sandwich, it was always with shrimp and I was always curious of how amazing the chicken one would taste. So, when I thought I hacked the taste and could make my own, I decided to try them with chicken.

Marinating the chicken with eggs and milk, make it stay moist and adds a little tangy flavor because of the lemon. That ways when you coat the chicken and fry it, the chicken inside isn’t bland, tasteless and dry.

The chicken after frying can be mixed in with the marinara to make it juicy and increase the flavor. Chicken once cooked this way can also be served with pasta, but since I am a big fan of sandwich and its always easier for my kids to eat a sandwich, I usually prefer it this way.

Making of Marinara sauce at home is pretty simple too. Being from India, I tend to make my marinara sauce a little spicier, but you can always turn it down if you are following my recipe for making marinara sauce at home. Secondly, a store bought marinara sauce is equally good, all you need to do is add a little onion powder and garlic powder to it, and if daring enough, a few chili flakes.

This recipe is great for kids lunch boxes and makes a great weekend lunch/brunch too. Hope you enjoy the recipe as much as I do.
