Methi Murgh Biryani

For the huge variety of Biryanis that I have cooked, I sometimes feel I should make a separate section for “Hyderabadi Biryanis”. The city is as popular for Biryanis as much as its for Falakhnuma Palace. Talking about Falakhnuma palace, though I am from the state of Forts and Palaces, Falakhnuma happens to be one palace that I would want to visit only because my favorite actor, Salman Khan had his sister married there and that’s when I was in love with the interiors.

Hyderabad does excite me for food, not just Biryanis but Haleem and samosas too. I love watching food shows and one such had details of a famous joint who cook their Haleem all day in nuemerous different large size pots only to last 2 hours. Its that popular and I am sure super delicious. Hyderabad has at least 20 kinds of different Biryanis but I think its more for the Hyderabadis to understand and for the rest of the world, its just Hyderabadi Biryani. I love to cook the different recipes of Hyderbadi Biryani. They are all so distinct from one another that tasting them is any Biryani lover’s dream come true.

Each Biryani is so distinct and as much as I read more, the ingredients that makes each Biryani stand out are so simple and yet make the Biryani so exclusively delicious.

This Biryani is very delicious and the flavor of Fenugreek adds a very different taste to the Yakhni. This Biryani actually is one of my older son’s favorite Biryanis, who loves kebabs and honestly isn’t a big fan of Biryani. This is a great recipe for people who enjoy their Biryani spicy or masaledaar. It tastes best with Dalcha and Onion Raita. Since, the Biryani is high in spices, you would want to serve it with something that mellows down the spice level.

Kashmiri Murgh Akhrot Biryani

This dish is cooked with Chicken/ Murgh and Yogurt on slow fire. Dry fruits like raisins and walnuts native to the beautiful state of Kashmir, add a distinctive flavor to it.

As the month of Ramadan begins all over the world, Biryani is a feasting dish perfect for Ramadan Iftaars, the celebration that rounds up Ramadan. A biryani of some description is always a regulation dish at celebrations, and the Kashmiri version is one of the many that needs to be a part of the Muslim tradition.

This version of Biryani is often preferred as it is rich and made even more special by the use of raisins and walnuts. I believe making different versions of Biryani also has a lot to do with the status of the family, this dish is judged by both the quantity and the array of nuts and dried fruits included.

I have always loved movies based in Kashmir ki waadiyaan. The idea of romance on a row boat is very fascinating. On one side, where the Gandola rides in Venice are considered romantic, my idea of romance still goes back to the beautiful shikaara rides with flowers around. I really wish to take that ride with Mr. Parveez some day. Till then, trying to cook cuisines from my favorite places is something I enjoy doing.

The first time I tried the Kashmiri Murgh Akhrot Biryani was one of my Friday Iftaars. Though I try to stay away from experiments during Ramadan, Friday Iftaars are a different story. My tables are lavish and my dastarkhaan has food in large variety and quantity to feed the whole army. My kids love our Friday Iftaar and somewhere look forward to Ramadan, for the lavish Friday Iftaar.

This dish has a lot of influence from the Persians. Most persian dishes are made using loads of dry fruits and nuts with meat, but with the addition of spices, the flavor of the dish changes, hence makes a Kashmiri Biryani.

This Biryani seemed rich in flavor as I mentioned before. The spice level is less, since the region of Kashmir has most of their spices come in from Saffron and cinnamon than chili. Its very pleasing to the eyes since the presentation has loads of raisins and walnuts garnished. In all, a fabulous dish and very flavorful.

Delhi Ki Biryani

This recipe was given to me by a Nepali house maid, who belonged to Uttarakhand. She learnt cooking during her stints in various Delhi homes, where she happened to also work in a high class Muslim homes, where she learnt how to make their authentic family recipe. She happened to be working for a friend’s family in Bangalore and seeing my love for biryani, shared the recipe.

Its amazing how most muslim families always have that one Biryani recipe that passes on from one generation to the next and Biryani from each of these homes are always distinct in flavors and delicious in their own way. Its beautiful when some people are ready to share their recipe so more people can enjoy the dish. After all, food flavors are worth sharing.

By the way, talking about distinct flavors, I hope you do know that adding spices at different times also changes the flavor of the biryani. A lot of people disagree with my point but actually that’s a fact. When you follow my biryani recipes, Please do make sure that you pay attention to what’s added when, because if you happen to switch ingredients entering a dish, it does change the taste which is a noticeable change. Bihari Chicken Biryani

This Biryani is from Bihar. I got the recipe while I was reading a book on Bihari cuisine by a famous chef who hails from the state. Its a shame, but Bihar isn’t very popular for its non vegetarian cuisine. Like, most of us, when we talk about Bihar’s cuisine, we do not go beyond Litti chokha. The fact is that Bihar offers some of the best recipes for kebabs and Biryani.

The flavors are pretty spicy, like the Bihari movies and for sure would make any Biryani lover super happy. Its one of best Biryani recipes and pretty easy for beginners too. You could always make a little change to the spice level to suit your taste buds. You could always ask for changes you’d like to make, if you aren’t too sure. After all, Biryani is a way big of a dish for anyone to mess up. You have to be very careful before you start.

Arabian Biryani

Mr. Parveez’s is from a family of Pathans and the family is believed to be the descendant of the Mughals. As much as the relationship is defined by few asharfis and some ancient utensils that are still owned by the family, and endless tales through “Baats” [people who keep records of families and generations in India]. The Indian version of ancestry. Mr. Parveez is very proud of the fact that he has Mughal blood line, and some how is connected to the fierce Mongolians.

I have lived in Jordan for around two years and I loved the delicious Jordanian food. During those days, I tried a dish called Maqluba, which is made with Rice, chicken, Potatoes, cauliflower and a few other vegetables. The spice level was low and decorated with nuts and raisins. Though I still don’t have the authentic recipe till date for Maqluba, and I do wish to make it some day. But till then, I thought of trying something close.

So, I got down to trying the Biryani that’s more connected to Mr. Parveez’s roots and that when I came up with the recipe of this Biryani. The inspiration came from different dishes cooked with Rice and Chicken in the middle east, specially Morocco and flavors used in early Mughal era. Hope you enjoy te recipe as much as I did.

Ammi ki Biryani

I learnt this Biryani from my Mother-In-Law. And I love the way she makes it, just perfect mix of the spices and delicious . My Mother in law hasn’t been cooking regularly for quiet some time. She enjoys her retirement since she has daughter in laws to take care of everything needed to run the house. My husband moved to USA at the age of 23 and none of his brothers were married then, so he would always miss the flavors of food cooked by his mom. The hardest part was that he missed the transition of his mother giving away the cooking turns to his sister laws and whenever he visited India, his taste buds would miss his mother’s food and that could not be replaced by the food cooked by his amazing sisters and sister in laws.

By the way, my sister in laws are amazing cooks and some of their dishes are just hard to try out. They have their own charisma which makes their dishes very flavorful. So, one fine day, while enjoying our vacation, I made it a point to jot down how my mother in law made her one in a million Biryani and she was kind enough to share everything she did, with me. As soon as we returned, I made this Biryani and since then, this is my husband’s most favorite. My kids love it too. Something about the spices is such that this Biryani tastes better with goat/ lamb than with chicken, but then again, chicken is also delicious, if that’s your preference.

Drumstick Sambhar

Drumstick Sambhar is one of the basic and easiest sambhar recipes you can come across. I have always recieved most compliments on this sambhar from family and friends. I think one of the best foods are foods that require less time and hassle to cook and can be served immediately. Since you consume them few mins after cooking, the flavors are beautiful, rich and divine.

If you study Indian culture closely, you will notice a word in food terms, referred as “Saatvik”. Saatvik is clean eating habits and is generally referred to the food consumed by Sadhus or Spiritual healers and teachers. It was believed that simple food helped them think higher and deeper thoughts and eventually they became leaders of religion or society by keeping their lifestyle basic and food extremely simple. During the time of ancient India, even widows were asked to consume spice less food, since it was believed that consumption of spice led to desires that were regarded a sin for women.

As much as I have studied, Saatvik food requires almost no spice and it lets the flavors of the vegetables and daals enhance the dish, rather than produce mixed with spices. With time and years passing by, the meaning of saatvik changed as well. Now saatvik stands for simple and clean food and is consumed by everyone on daily basis to take a break from the over processed food around us.

This sambhar recipe is very clean and easy to make. Serve with boiled rice and enjoy the heavenly flavors.

Chhole Palak

My kids, like all other kids completely dislike spinach. Any form of spinach curry or spinach daal made with different recipes would not make them happy. I am sure a lot of people share this story. My kids liked chhole/ chickpeas and that’s when I tried to come up with a recipe that has spinach, and does not give you that strong spinach taste.

This recipe is healthy, super delicious and is a wholesome nutrition. Its even good if you are on a diet.

Chanwle Ki Sabzi

Indians and their love for lentils and beans is known worldwide. Most homes in India cook some kind of lentil or beans everyday. The dishes in North India and South India, basically my in laws and my mom’s family cook are very similar, except for the modes of cooking.

Being from Rajasthan, we cook more of mung, chana, chanwle, chhole where as, my in laws cooked more of whole mung, toovar and horse gram. Now don’t get me wrong, its not that my mother in law never cooked yellow mung, but it wasn’t cooked like Toovar, which is cooked in 4 different varieties in the house. Where as, my mom only used Toovar daal for khichdi or for making sambhar. All great beans and lentils and so many varieties and I consider myself really fortunate that I have the honor to learn all these great dishes. Its not just a delight to cook them all and enjoy a huge variety, but its a great pleasure to be able to share them all with the world.

Getting back to Chanwle or Black eyed beans. This dish is my own creation and I have a beautiful story attached to it. Mr. Parveez had not tried Chanwle, except at restaurants. So, once we happened to be eating some north Indian thaali and chanwle made their way to one of the foods served. They were cooked lightly in mild spice and had an amazing taste. I, then mentioned to my better half that I have grown eating these beans and since he likes I would love to cook them at home. My next trip to the grocery store had chanwle in the list. I knew I had to soak and boil them, and I thought I would ask my mom for the recipe, not realizing that the time I started cooking dinner in USA, my mom was sleeping in India. The soaked and boiled chanwle looked at me with high hopes of being cooked for dinner and that’s when I made up my own recipe, which was loved by my husband and kids.

I will share my mom’s recipe too on this site. Meanwhile, this recipe is simple, amazing and super delicious and healthy.

Dalcha

I am from North of India, Rajasthan, to be precise. There was just one kind Biryani that my mom made, similar masalas with either mutton or chicken and always served with Boondi Raita. Once I got married, everything changed. I got introduced to the real Biryani world. Getting married to a family who are vaguely connected to the Mughals [believe me] and a good food loving family.

I got introduced to not just varieties of Biryanis, that are almost close to the language dialects of our country with basic ingredients being the same, while spices, marination time and other requirements change and the result each time is fabulous biryani with different taste, leaving you craving for a new and different biryani every time.

So, coming back to Biryani accompaniments, I also discovered new side dished for Biryani, like Khatte Baingan, Cucumber Raita, Onion Tomato Raita, Dahi ki chutney, Mirch ka salan and Dalcha. Earlier, Mr. Parveez would always make Dalcha when I made Biryani. He took a lot of pride and would always be more than happy showing off his cooking skills, specially since its one of the few things that only he made. Until one day, my high tech husband had a last minute work call and he came out with the secret recipe and I made it…Its easy, thought you might find it difficult the first time but you get the hang of it and trust me, it makes you perfect Biryani outstanding.
