Shrimp Hero Baguette Sandwich

This recipe is a true inspiration from one of our favorite restaurants near our old home. This restaurant is pretty old, owned by a lovely Italian family and has been serving New York style pizza for almost 80 years if not more. A very small restaurant that can barely seat 12 people, but most people order their take outs. We were their regular customers and along with the Pizza, they also served variety of other Italian fast food cuisines. What I loved the most was the Garlic knots and the Shrimp Hero Sandwich. The sandwich was super huge and loaded with wonderful sauce and lots of cheese. The ingredients always tasted so fresh and awesome.

I kind of always love going to these small eateries because one can vouch that they cook fresh because they do run out of things and say “no” too which never happens with big chains. Although, big chains always maintain quality but use large amount of preservatives that keep the food looking good and taste great. Anyways, getting back to my favorite Shrimp sandwich. We moved and its just not possible to go back and forth to that restaurant. So, once I started making my own bread, I also started making baguettes and that led to making these wonderful sandwiches.

My boys love eating bread. Specially if the bread is served straight out of the oven. Baguette, the long delicious French Bread seems to be a family favorite. Every restaurant that served a good bread had us visiting them more often. Every time we bought French Baguette from our favorite baker, I would reheat it in the oven to make it taste fresh, which was great but not the same. And, that’s when I thought I should try making my own baguette at home. Honestly, looking at so many different recipes, I felt that Baguette wasn’t all that fancily difficult and I decided it was time I just make it. I mean, how could anything be better than a freshly baked loaf of bread? That crackly crust, the tender, airy crumb inside, steamy and yeasty and just begging to be torn into.

You can look into my baguette recipe and follow it. It’s a detailed recipe and the instructions are pretty easy to follow and execute. Once your baguette are cool enough to handle, cut them to sandwich size and slit from the middle. To prepare the shrimp, just devein and take the tail off, wash them well too. Fry some garlic in the oil and add marinara sauce. Once it comes to a boil, add shrimps to it. Cook for 2-3 minutes, add Red chili flakes, dry parsley and garlic powder. Cook for a minute and add Onion powder. Cover and cook for 2 minutes. Your marinara sauce should be thick by now and shrimp should also be cooked. Slit the baguette and add the shrimp with sauce. I like mine spicy, so I added Jalapenos as well, but you don’t have to. Place them in the oven at 350F for 5-7 minutes. Sprinkle some dry parmesan cheese and serve.

Kaachra aur Gawarfali sabzi

I have no idea how some vegetables in India got their names, considering that the meaning of their names in Hindi is weird, forget the meaning in any other language. Like Kaachra is close to “Kachra” which means trash and the term Gawar in Gawarfali stands for uneducated and so, we do have loads of people referring to these beans as uneducated beans. Its pretty hilarious, but these veggies still seem to be a summer time favorite in my state, Rajasthan.

My Mom made an awesome gawarfali sabzi/ curry and it was one of my all time favorites. Eating it with a hot phulka and yogurt was amazing. Now, living far away from home, craving home food is normal and I am glad that we get so many vegetables that we are used to eating back home. I started cooking gawarfali by itself soon after we got married and Mr. Parveez loved it, because most of the time my Mom would cook it this way. I believe it had to do with the availability of Kaachra or may be it had something to do with my father probably not enjoying it much. I am not too sure of the reason, but I started cooking gawarfali by itself since I never found Kaachra in USA. Finally I discovered it in a Chinese vegetable market and was super delighted.

Mr. Parveez is not a big fan of the cucumber family so, Kaachra wasn’t his cup of tea and of course I will have to continue making the veggie without it but for the time I did make it, I had to click pictures and share the wonderful dish with all the flavors of my hometown. This is great as Keto/ low calorie/ low carb diet option as well. Enjoy!!

Asian Chicken Noodles

Chinese Chicken noodles are a delicious and a quick lunch/dinner that requires few ingredients that are easily available in your pantry. Also it gets from kitchen to dining table in a matter of few minutes. And its just a perfect meal for weekends. Egg noodles cooked with chicken and few veggies with a few sauces mixed in together with Garlic fried in a smokey flavor makes a perfect Asian style Noodles and they come out so amazingly delicious that you will never feel the need to order take out from a Chinese restaurant again. This dish is so mouthwatering that you will making it very often.

My kids can actually eat these Chicken noodles for every other meal. These Chicken noodles are pretty easy to make, I usually add Onions, scallions and green chilies. You can add broccoli and bell peppers as well if you feel like. Usually I also add in corn kernels at times and something that I feel adds a lot of flavor to this dish are Peanuts. The key to preparing perfect noodles is to cook everything separately and mix things together and then add in the mixed sauce. Also, one thing that I feel makes these noodles perfect are cooking them with tongs specially when you mix things together.

One of the reasons why Chinese food does not taste the same at home as in restaurants is that ingredients that are put in Chinese noodles, including the sauce, all are cooked on high heat. The food cooked on high heat and that kind of gives a smoke flavor to the ingredients and the smoked or charred flavor is absorbed pretty fast. A lot of people suggest using a Wok but honestly, I don’t use one and feel my Asian Takeaways tastes better than homemade ones is the smokey charred flavor in the dish. Ingredients are tossed on high heat, really quickly to give the flavor. It sometimes feels impossible to recreate the same flavor at home, of course without the flavor enhancers and God knows all what goes into your food to make it taste so good, but honestly, the food made at home tastes much more fresh and if made using the right recipe with all ingredients in proportion will make a mouthwatering dish.

Now its not possible for everyone to have a Chinese Wok at home. But its always better to cook in a pan that is shaped like a dome. It gives you more surface area to work. For making noodles stir fry or Rice stir fry, a large pan is always good. Tossing in high heat with sesame Oil adds the smokey flavor to the noodles. Enjoy!!!

Drumstick Sambhar

Drumstick Sambhar is one of the basic and easiest sambhar recipes you can come across. I have always recieved most compliments on this sambhar from family and friends. I think one of the best foods are foods that require less time and hassle to cook and can be served immediately. Since you consume them few mins after cooking, the flavors are beautiful, rich and divine.

If you study Indian culture closely, you will notice a word in food terms, referred as “Saatvik”. Saatvik is clean eating habits and is generally referred to the food consumed by Sadhus or Spiritual healers and teachers. It was believed that simple food helped them think higher and deeper thoughts and eventually they became leaders of religion or society by keeping their lifestyle basic and food extremely simple. During the time of ancient India, even widows were asked to consume spice less food, since it was believed that consumption of spice led to desires that were regarded a sin for women.

As much as I have studied, Saatvik food requires almost no spice and it lets the flavors of the vegetables and daals enhance the dish, rather than produce mixed with spices. With time and years passing by, the meaning of saatvik changed as well. Now saatvik stands for simple and clean food and is consumed by everyone on daily basis to take a break from the over processed food around us.

This sambhar recipe is very clean and easy to make. Serve with boiled rice and enjoy the heavenly flavors.
