Mango Cream
A dessert with a vanilla Mango layer

  1. Pour heavy cream into a mixing bowl and sprinkle the gelatin over. Mix Gelatin in 2 tbsp of warm water and let stand until gelatin has softened, about 5 minutes. Once it cools down, add it to the cream.
  2. Add sugar and mix well. Keep whisking for 5-7 minutes.
  3. Add honey and mix for another 5 minutes on a medium speed. You will see the cream is almost double in size and the peaks are soft and creamy. At this point, take half of the cream out of the mixing bowl.
  4. Add Vanilla essence to one half and mix well.
  5. Mix in Mango puree and Mango essence in the other half. Mix well. Refrigerate both the mixes in the refrigerator for around an hour.
  6. To set it, we will add them both layer by layer. First add the mango layer, add a few dry fruits. Let it set for 5 mins.
  7. Add the vanilla mix and a few more dry fruits on it and give it 5 mins.
  8. Finally add the mango layer again.
  9. Decorate it with few more nuts.
Recipe Notes
  • You can always use Agar Agar as a vegetarian option for Gelatin. Just make sure that you use it according to directions. Agar Agar is 8 times stronger than Gelatin.
  • If you can’t find good Mangoes, you can always use Mango Puree.
  • While setting the layers, be careful and add in the layers lightly. You need the layers to be seen separately from each other.
