  1. Combine the flour, salt, and sugar in the food processor. Cut up the butter into large chunks, and add to the flour. Pulse until the mixture is crumbly. Add the ice water and pulse until the dough is held together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. To make the filling, take butter and let it melt half way.
  3. Combine the apples, cider, zest and juice, and salt, and cook over medium heat.
  4. Stir in the sugar and flour and cook for a minute or two more.
  5. Add in Cinnamon and cook for another 5 minutes on low heat. Let it cool down.
  6. Divide the dough into 6 parts. Roll each piece in a thin rectangle, and carefully pile filling in the middle of each rectangle.
  7. Wet the edges, and fold over, pressing each into a turnover shape. Seal the edges with a fork.
  8. Heat the oil in a pan to 350F. Fry the pies for 3-4 minutes. Flip halfway through. Remove when they are a deep golden brown.
