Preheat the oven to 350F and line a baking tray with parchment paper.
Cream Butter and sugars together in a stand mixer, until light and fluffy. Add the egg and Vanilla essence.
Whisk Flour, cinnamon powder, salt and Baking soda together.
Add the flour mixture to the butter and sugar mix and whisk together till everything blends in.
Add in the chocolate chips and stir by hand with a spatula.
Drop cookies, around 6 to a sheet. Bake for 8-10 minutes, till they are golden brown. Please make sure you rotate the pan in around 4-5 minutes to ensure the cookies are evenly baked.
Take the tray out. Let the cookies rest on the baking sheet for 2 minutes.
Transfer them on a wire rack to cool completely. Serve with a warm cup of coffee or milk.
