  1. Grate the Bottle gourd and keep it aside. Squeeze the water out.
  2. Boil the milk till its reduced to 3/4 of the original quantity. You need to boil the milk till it reduces to three fourth of the original quantity. This should take around 20 – 30 minutes.
  3. Add some cardamom powder to the milk. Stir and mix it in properly.
  4. Add the condensed milk.
  5. Add ghee to a pan and add the grated Bottle gourd to it. Saute it for 10-15 minutes on low to medium heat.
  6. Add the saute’ed Bottle gourd to the boiling milk and cook for 10 minutes.
  7. Add the grated Khoya. Cook for 10 minutes and keep stirring.
  8. Add the green food color and more sugar if you need.
  9. Add saffron, kewra water and rose water to little milk and add it to the kheer. Mix well and let it cook more for 10 minutes.
  10. Let the kheer cool down. You can refrigerate it and keep it for around a week.
  11. Decorate with nuts and silver leaf and serve.
